1. Good quality coffee beans

Fresh ingredients can make delicious dishes, and the same goes for coffee! Good beans are the first element to brew a mellow coffee. High-quality beans may not necessarily make a good cup of coffee, but if you encounter low-quality coffee beans, no matter how good you are at brewing coffee, it will be in vain.

2. The ratio of coffee beans to water

There have always been different opinions on how to determine the ratio of coffee to water. In general, the ratio of coffee to water is 10 grams of coffee in 200 milliliters of hot water. Some people use 15 grams of coffee with 150 milliliters of water. For those with a lighter taste, it is recommended to dilute it slightly with a ratio of 1:13 to 1:17, and for those with a heavier taste, you can use a ratio of 1:10 to 1:12.

The ratio has a significant impact on the flavor of the coffee, but this problem can be determined in advance according to your own taste so that we can focus on other variables when hand-brewing coffee.

In addition, the temperature of the water will also have a significant impact on the taste of the coffee. If the water temperature is too high, the coffee will taste more bitter, and if the water temperature is too low, the sourness will be stronger. It is recommended to use a temperature of 80-85 degrees for deeply roasted coffee beans, and medium-lightly roasted coffee beans can be extracted at a water temperature of around 90 degrees.

It is also important to consider the quality of the water. Good quality water is an important step in quality coffee and filtered water is recommended.

3. Extraction time and coarseness

The coarseness of grinding and extraction time are inseparable, and the relationship between them is directly proportional. The finer the coffee is ground, the easier it is for the aromatic components to be extracted by hot water, and the extraction time is relatively short. Therefore, the coffee will not taste bitter due to over-extraction. On the contrary, the larger the grind, the less likely the aromatic components will be extracted, and the time spent will be longer. Insufficient extraction will result in a tasteless coffee. Therefore, the coarseness of grinding has a greater impact on hand-brewed coffee.

Different hand-pour methods require different grind sizes. Grind size is one of the first and most important variables you should consider when hand-pour coffee. If your coffee tastes unacceptable, it may be over-extracted, which can be corrected by coarsening the grind.

If your coffee tastes bland, it may be due to under-extraction, in which case setting a finer grind size will help improve the coffee flavor.

By time:

Keeping the variables of coarseness, temperature, and water-to-coffee ratio constant and considering only the variable of time, if your coffee takes longer than expected to pour over, the grind may be too fine; if it pours over too quickly, the grind may be too coarse.
