Coffee bean roasting degree: from light to dark, at a glance

Light Roast


Light roast is a roasting degree of coffee beans, also known as "mild" or "city" roast. At this stage, the color of the coffee beans is lighter brown, with a crispy layer on the surface. This degree of roasting usually retains the original acidity and floral aroma of the coffee beans.

Because light roasting is done at a lower temperature and for a shorter time, there is still a certain amount of moisture inside the coffee beans. Therefore, during the brewing process, this moisture will gradually be released, bringing a fresh, bright and lively taste.

Medium roast

Medium roast is a stage between light roast and dark roast. At this stage, the coffee beans begin to become darker and the crackling becomes thicker. Compared with light roast, medium roast emphasizes sweetness and cocoa flavor more.

After being roasted at a medium temperature, the moisture content of the coffee beans gradually decreases and the acidity is relatively weakened. Coffee beans of this roasting degree are suitable for making espresso or mixed coffee drinks such as latte.

Dark Roast

Dark roasting is a very high temperature and long time process, which makes the coffee beans very dark and shiny. At this stage, the crackle has been fully formed and obvious oil droplets begin to appear.

Due to high temperature and long processing time, dark roasting causes a lot of water loss inside the coffee beans and produces bitterness and burnt aroma. Therefore, this degree of roasting usually gives people a strong, bitter, cocoa flavor and spicy or woody notes.

Special baking

In addition to the traditional three levels of light, medium and dark, there are some special types of roasting that are worth mentioning, such as "City+", "French", "Italian" and so on.

"City+" is between medium-roasted and full-roasted. It is slightly heated based on medium-roasted to highlight the sweetness and acidity of the coffee beans.

The French roast is a very dark roast that makes the beans very dark and shiny. This roast often gives a rich, bitter, cocoa flavor as well as spicy or woody notes.


“Italian” refers to the rapid fire process that is completed quickly at high temperatures, producing a special and powerful aroma and taste.
