But have you noticed that when you brew coffee in winter, the extraction parameters are the same, but the taste of the brewed coffee is different. This is because of the change in temperature. Today, I’m going to talk to you about what to pay attention to when brewing coffee in winter~ | Preheating equipment The editor recommends that you preheat your brewing equipment, such as a hand-poured kettle or filter cup, before brewing coffee. Most of our hand-poured kettles are made of stainless steel and copper, which have a strong ability to absorb heat in winter. When boiling water is poured into the kettle, it may suddenly become more than 80 degrees. At such a low temperature, it is easy to get a cup of under-extracted coffee. Common materials for filter cups include resin, ceramic, glass and metal. Except for resin filter cups, ceramic, metal and glass filter cups will become cold due to the lower ambient temperature. When adding water, the hot water will cool down as soon as it touches the cup wall, and there may be a temperature difference of 2 to 3 degrees. Therefore, in winter, if you want to have the same brewing conditions as in summer, the editor recommends pouring some hot water into the hand-brew kettle to preheat it, and then use hot water to rinse the filter cup to prevent the filter cup wall from being too cold. You can even fill your filter cup with more hot water to allow the filter cup wall to absorb heat thoroughly, which has a great impact on maintaining the brewing temperature. | Pay attention to the cooling of the water in the hand-pour kettle In the summer when the temperature is high, the water temperature in the hand-pour kettle does not change significantly during the 2-3 minutes of brewing time. However, in the winter when the temperature is low, the hot water may cool down quickly, resulting in a low temperature at the end of the brewing process. The body in the second half is insufficient, and the taste will be slightly thin and the aftertaste will not be long. Therefore, the editor recommends that you pour more hot water into the hand-pour kettle than usual. Sufficient hot water can keep the hot water in the hand-pour kettle from the cold room temperature and maintain the water temperature, so you don’t have to worry about insufficient extraction and no taste in the second half of the brewing process. | Moderately increase the brewing temperature If you have preheated your equipment and added more hot water to your pour-over pot, but the flavor is still not as full as in summer, it may be that the environment you are in is really harsh. For example, strong winds and high humidity will quickly take away your temperature (whether it is a filter cup or a pour-over pot), resulting in insufficient extraction. So let's moderately increase the water temperature at the beginning of brewing to combat the cold environment~ For example, if you usually use 88-degree water to brew, then appropriately increase it by 2~3 degrees and use high water temperature to increase your extraction rate. | Adjust your powder-to-water ratio In addition to the flavor effect caused by temperature, the decrease in body temperature will also affect our taste preferences. In cold weather, a richer taste will make people feel comfortable and relaxed, just like a bowl of thick soup, which will comfort your tense and cold body. Therefore, if you are used to using a lower coffee powder to water ratio, drinking it in the cold winter may make you feel that it is not tasty enough, but this is not a problem with the coffee itself, but a demand of the body, and this problem is actually not difficult. Slightly increasing your coffee powder to water ratio can have a significant improvement. If you usually use a coffee powder to water ratio of 1:15, you might as well try using a coffee powder to water ratio of 1:14. This will increase the overall concentration of the coffee and make it feel richer when you take a sip. When your body feels comfortable, your taste buds will naturally feel satisfied. Water temperature is always a very important thing when brewing coffee.
