So how do you judge a good cup of fancy coffee? The key lies in the taste. If you put it in your mouth and there is nothing else that affects its aroma except the natural aroma of coffee, then this is a good cup of fancy coffee.

1️⃣ Burnt: Burnt is inevitable in the field of traditional Japanese dark roasting, but high-quality Japanese dark roasted coffee will still control the overall proportion of burnt taste in the coffee flavor, and more high-quality flavors will make the taster feel pleasant. But nowadays, medium and light roasting is the mainstream, and burnt means failure in roasting or extraction.

2️⃣ Astringency: Astringency is a taste that everyone originally thought was inferior. The astringency in coffee comes from several aspects: defects in coffee bean quality, coffee roasting defects, and coffee extraction defects can all lead to astringency.

3️⃣ Bitterness: Good coffee is not without bitterness, but the bitterness only accounts for a small proportion of the coffee taste. And it will not bring you negative feelings, and it is easy to be combined with the original high-quality flavor of coffee. The coffee in some coffee shops will give people a feeling of extreme bitterness, but some people just love this kind of refreshing bitterness.

4️⃣Numbness: Numbness is a sign of quality in Sichuan cuisine, but it is a typical derogatory term in coffee. Numbness in coffee is either caused by under-roasted coffee beans, insufficient extraction or over-extraction. As long as numbness appears in coffee, it is definitely not a qualified cup of coffee.

5️⃣Salty: Salty is a less obvious taste among coffee defects, and it is often difficult to detect in coffee.
