How to make hand brewed coffee

On "I Am a Singer", Li Jian showed us how to make hand-brewed coffee, which also played a big role in the promotion of boutique coffee. Look at how many fans Brother Jian has. It just so happens that I am also his fan and a coffee fan. People who follow him will definitely want to try it after seeing his intoxicated expression.

Ingredients

Coffee powder 10g 90 degree water 160ml
Filter bag 1

How to make hand brewed coffee

1. This is dark roasted. Generally speaking, you can choose the roasting degree according to your taste.

Medium roasts are lighter in color, have no noticeable oil on the surface, and have a sour, rich taste.

Dark roasted coffee has a darker color, a small amount of oil on the surface, and a bitter, mellow taste.

The taste of decaffeinated coffee is soft and gentle, without the rich taste of coffee.

2. Prepare the ingredients, coffee beans, a spout kettle, a cup, a filter paper bag (I use the hanging ear type), a hand grinder (you can use a grinder or a food processor, try to process it finer, otherwise it will affect the taste)

3. Put the beans into the grinder. Generally, hand-grinded beans can be adjusted to control the coarseness of the powder.

4. After the powder is ground, open the filter bag and wet the filter bag and the cup to be used with water above 80 degrees, otherwise the coffee poured into the cold cup will affect the taste

5. Use a coffee spoon to measure the coffee powder, or use a gram scale for more accuracy. One spoon per person is enough. I like strong coffee so I put two spoons. Then pour 90-degree hot water into the coffee powder and simmer for 30-60 seconds.

6. When the water temperature in the kettle drops to about 86 degrees, pour in coffee powder clockwise until the water reaches the appropriate level. When closing the kettle, pour water counterclockwise.

7. Add sugar cubes or coffee creamer to fill the house with coffee aroma! It is generally recommended to use a cup no smaller than 200ml so that the coffee will not overflow. The recommended ratio of hand-brewed coffee powder to water is 1:16

Tips

Other considerations that affect the taste: 1. The ratio of water to dry powder is 12:1 for siphon, 16:1 for hand brew, and 14:1 for French press. 2. The water temperature should be controlled between 83 and 90 degrees. 3. If you don’t have a hand brew pot, you need a long-mouthed pot to control the flow rate and temperature of the water. 4. Before tasting the coffee, drink a mouthful of water to wash away the bad smell in your mouth, and then you can feel the mellowness.
