Luckin Coffee Cup Processing Method for Green Coffee Beans

Green coffee beans are the basic raw material for making coffee, and the processing method directly affects the taste and quality of the final coffee. This article will focus on the processing method of green coffee beans and introduce its various links from picking to roasting.

pick

Picking is the first step in determining coffee quality. Generally speaking, berries that are moderately mature, intact, and free of pests and diseases are the best for picking. Farmers usually harvest berries of similar maturity at the same time by hand or machine, and try to avoid damage and fermentation.

Peeling

Peeling is the process of separating the outer red pulp and inner yellow essence of the picked coffee cherries from the seeds. This process can be done by wet or dry methods.

Wet method:

Wet processing involves soaking the freshly harvested coffee in water immediately before fermentation, and then removing the outer red pulp by mechanical force. This method retains the acidity and clarity of the coffee beans, but it also requires a lot of water.

Dry method:

Dry processing is to dry the picked coffee berries directly in the sun and peel them after they are completely dry. This method is relatively simple and saves water resources, but it is easily affected by factors such as weather conditions and pests.

Fermentation

Fermentation refers to the process of placing peeled coffee beans in a specific environment for microbial fermentation. By controlling parameters such as time and temperature, the flavor characteristics of the coffee beans can be adjusted.

washing

Washing is to rinse the fermented coffee beans with water to remove residual substances and stop their further fermentation. This step can be done with clean water or immersion equipment.

Baking

Roasting is the process of placing processed green coffee beans into a heat source for high temperature heating. Different degrees and times of roasting will produce coffee with different tastes and flavors.

Package

Processed roasted coffee beans need to be packaged to maintain their freshness and quality. Common packaging methods include vacuum packaging, nitrogen filling, etc. to prevent oxidation and moisture intrusion.

storage

Finally, the processed coffee beans need to be stored in a suitable environment. Generally speaking, they should be kept away from direct sunlight, high temperature and humidity, and stored in a sealed container.

By processing the green coffee beans through the above steps, their original flavor and quality can be preserved to the greatest extent. Each step is crucial, and it requires the joint efforts of farmers, processing plants and consumers to produce high-quality coffee products.
