Mocha coffee is my favorite. The rich cocoa aroma and the light bitterness of coffee blend together. This sweet and slightly bitter feeling is very much like the taste of love. If you are also a mocha lover, then I believe you will also like this unique mocha coffee bread.

Mocha Coffee Steamed Toast

Because I have been ill recently, I have been advised by my doctor not to consume too much caffeine. It is okay for me to not drink it, but it is okay to eat some bread. This is also the original intention of making this little toast!

In addition to its unique taste, this small toast has two special features: first, it uses a quick one-time fermentation method, skipping the basic fermentation and relaxation, which greatly reduces the production time and is very suitable for office workers; second, it uses steaming instead of baking, which makes it delicious and does not cause irritation, so friends who don’t have an oven at home can also make it easily.

Ingredients list: 170 grams of Japanese toast powder (high-gluten flour), 5 grams of cocoa powder, 2.5 grams of instant black coffee powder, 20 grams of fine sugar, 1.5 grams of fine salt, 85 grams of milk, 35 grams of whole egg liquid, 2.5 grams of high-sugar tolerant dry yeast, 10 grams of butter, and 15 grams of crushed peanuts.

It is recommended not to add the milk all at once. You can reserve 5 to 10 grams and decide whether to add it depending on the absorption of the flour.

Preparation method:

Step 1: Microwave the milk until it is slightly hot, add instant black coffee powder, stir well, and let it cool completely for later use.

Step 2: Put all ingredients except butter and peanuts into the bread bucket in the order of liquid first and flour second. Note: Place sugar and salt diagonally and away from yeast.

Step 3: Start the bread machine's kneading function and set the time to 25 minutes. Knead the dough until it reaches a smooth and elastic expansion stage. Add softened butter and continue kneading until the butter is completely absorbed and the dough reaches a complete expansion stage where the glove film can be pulled out. Finally, add the crushed peanuts and knead lightly.

Step 4: Pour the kneaded dough onto the kneading mat and shape it into a round shape.

Step 5: This toast uses the quick one-time fermentation method, so we divide the dough directly into 4 equal parts and round them up separately.

Step 6: Take a small piece of dough, roll it out into a tongue shape, and then roll it up from bottom to top. Repeat this process for all 4 pieces.

Step 7: Take a roll, roll it out again, and roll it up. Complete all 4 rolls one by one, and then place them in the toast box at intervals.

Step 8: Use the oven fermentation function to directly carry out the final fermentation at 36 degrees for about 40 minutes. When the fermentation is about 80% full, take it out and cover it with a lid.

Step 9: Put enough water in the steamer in advance, bring to a boil over high heat, and put the toast box in. Steam over medium-high heat for 30 minutes, and simmer for another 5 minutes before serving.

Step 10: Shake off the heat from the steamed bread, remove it from the mould immediately, place it on a cooling rack, and wait until it has cooled completely before removing it from the mould.

The steamed bread is extra soft even on the outside, and it won't get dry even after a day or two.
