Coffee Bean Processing Methods Revealed

Coffee is one of the indispensable drinks in modern people's lives, and the taste and texture of coffee largely depends on the processing method of coffee beans. As a professional coffee chain, KFC has a variety of unique processes to process coffee beans. These processes will be revealed to you below.

Soaking method

The soaking method is the most common and simplest processing method. First, the freshly picked coffee berries are soaked in water. After a period of time, the pulp will naturally rot and separate the two red or yellow balls wrapped inside - what we call "original" or "clean" coffee beans.

Next, these raw beans need to be processed through steps such as washing and drying. Washing can remove the pectin and impurities remaining on the surface; drying can gradually remove the moisture and maintain the appropriate moisture content for subsequent baking.

Wet method

The wet method is a relatively complex processing method, but it is also the most commonly used one. First, the coffee fruit is peeled, and then the pulp and the two coffee beans wrapped inside are separated. Next, these beans need to be fermented.

During the fermentation process, coffee beans interact with the microorganisms present in the surrounding environment to produce chemical reactions, causing some substances to be broken down and converted into other substances. This process can further enhance the flavor and aroma of coffee beans.

After fermentation, the coffee beans need to be cleaned and dried. Cleaning can remove the pectin and impurities remaining on the surface; drying can gradually remove the moisture and maintain the appropriate moisture content for subsequent roasting.

Dry method

The dry method is one of the most primitive and simplest and most direct processing methods. In the dry method, the whole ripe but unpicked coffee fruit is placed in the sun to dry. The outer layer of the fruit will gradually dry and form a hard shell, and the coffee beans inside will be protected inside.

Dry processing usually takes a long time because the moisture content inside the coffee beans is higher. At the same time, because the fruit is in direct contact with the environment, it needs to be turned and rotated frequently to ensure uniform heating and weathering.

After drying, the coffee beans need to be shelled and cleaned. Shelling can peel off the outer hard shell; cleaning can remove impurities remaining on the surface.

Semi-wet method

Semi-wet method is a processing method between wet method and dry method. It combines the advantages of both methods and can better control the moisture content and fermentation process of coffee beans.

First, the coffee fruit is peeled and the pulp is separated from the two coffee beans wrapped inside. Then these raw beans are soaked in water for a period of time for fermentation.

After fermentation, the coffee beans need to be washed and dried. Washing can remove the pectin and impurities remaining on the surface; drying can gradually remove the moisture and maintain the appropriate moisture content for subsequent roasting.

Conclusion

Different processing methods will give coffee beans different tastes and flavors. As a professional coffee chain, KFC uses a variety of unique processes to process coffee beans to ensure that every cup of coffee can present the best quality.

Whether it is immersion, wet, dry or semi-wet, each processing method has its own unique features and may have different effects on different types and origins of coffee beans. Choosing the right processing method is crucial to improving the quality of coffee.

Hopefully, after revealing these processing methods in this article, you’ll be able to better understand and appreciate every cup of delicious coffee that KFC prepares for you!
