Hand pouring is probably a method of making coffee that coffee fans are more familiar with. In the coffee circle, there are always various "myths" about hand pouring coffee: the highest skill in the era of boutique coffee, various schools of thought competing overtly and covertly, and extremely demanding technical requirements for the makers...

I want to clear the name of hand-poured coffee here! In fact, it is not as mysterious as everyone imagines. It is indeed difficult to make good hand-poured coffee, but it is very easy to get started. You will learn it in one go! Moreover, the process of making hand-poured coffee is very interesting and enjoyable, which is very suitable for playing at home.

If it is the first time for a novice to buy, I suggest you buy the V60 entry-level hand brewing set, which includes a hand brewing pot, filter cup, sharing pot, hand-cranked grinder, filter paper and measuring spoon. You can get them all at once for a few hundred yuan, and the price-performance ratio is OK. If you are the type who strives for perfection, you can also spend money to buy a dedicated electronic scale.

Pay attention! Here are some tips for early preparation: When making hand-brewed coffee, the recommended ratio of coffee powder to water is between 1:14-1:16, the water temperature is controlled at 90℃~94℃, and the coffee beans are ground into the size of fine sugar~

So we need to prepare:

20g of coffee powder ground into the size of fine sugar particles and 280-320g of hot water at 90℃-94℃.

Preliminary work:

Step 1: Fold the filter paper and put it into the filter cup. Place the filter cup on the sharing pot and rinse the filter paper with hot water from the hand-pour pot to remove the pulp smell, make the filter paper fit better, and warm the cup in the early stage.

Step 2: Pour out the hot water in the sharing pot, pour the ground coffee powder into the filter cup, and tap the filter cup to make the coffee powder even and flat to facilitate extraction.

Hand-washing process teaching:

What I am going to teach you today is the very classic and easy-to-learn academic hand-pour method, also known as the three-stage hand-pour method. As the name suggests, it is to pour water in three times. The advantage is that it can extract the coffee flavor more stably.

Step 1: In the first section, add 40g (twice the amount of coffee powder) of water. After wetting all the coffee powder as much as possible without touching the filter paper, stop adding water and steam for about 30 seconds to allow the coffee powder to fully release carbon dioxide and extract the flavor.

Step 2: The second water injection starts from the center point. A small water flow slowly counterclockwise draws a mosquito coil-like circle. The amplitude of the circle slowly expands and then shrinks. After injecting 130g-150g, cut off the water.

Step 3: After the water level drops to about half of the coffee powder layer, start the third stage of water pouring. The method is the same as the second stage until the hot water is poured in. When the coffee dripped into the sharing pot from the filter cup does not form a water column, you can remove the filter cup ~ a pot of hand-brewed coffee is ready!

Tips:

1. All material parameters prepared in advance can be adjusted according to personal taste and coffee bean characteristics, and there is no definitive answer.

2. During the water injection process, the water flow must be smooth and even, which requires more practice.

3. When pouring water and drawing circles, be careful not to let the water column directly contact the filter paper, otherwise it will seriously affect the extraction rate.

If you are looking for quick and convenient coffee making at home, Xiaozijun strongly recommends you to buy a French press! Not only can you make coffee, but if you want to drink tea on a whim, you can also use a French press! And the price is cheap, you can buy it for just a few dozen yuan.

There are no complicated steps to make coffee with a French press. It is very simple, but because the water and coffee powder are in direct contact, the coffee tastes rough and it is difficult to accurately extract a single flavor. However, the French press can release oil to a great extent, giving the coffee excellent body and aroma.

Pay attention! Here comes the knowledge point of the preliminary preparation: Generally, when making coffee with a French press, the ratio of coffee powder to water is recommended to be between 1:14-1:18, the water temperature is controlled at 85℃~92℃, and the coffee beans are ground into the size of brown sugar~

So we need to prepare:

20g of coffee powder ground into the size of brown sugar particles and 280-360g of hot water at 85℃-92℃.

French Press Instructions:

Step 1: Fill the cup with water in advance to warm it up. Place the ground coffee powder in the pot and slowly and evenly pour in the hot water. Start the timer while pouring in the hot water.

Step 2: When about 1/3 is poured in, use a stirring stick to mix the coffee powder floating on the water with the hot water. Continue to pour in water. Continue to stir gently after it is full. Then cover the lid and let it sit until the timer shows 4 minutes. Then press down gently to the bottom at a vertical angle and you can drink it!

Cold Brew Pot

I still remember when Starbucks first launched cold brew coffee, it set off a huge craze in Shanghai. It was limited to a daily supply, and you couldn't buy it if you were late. In fact, cold brew coffee is very easy to make. You don't need any skills, just be patient and wait.

The acidic substances in coffee made by cold extraction are much lower than those in hot extraction. The long-term direct contact between coffee powder and water can make it easier to extract small molecular flavor substances in coffee, such as floral and fruity aromas. Therefore, the aroma of cold brewed coffee is very impactful and the taste is smoother and cleaner.

Pay attention! Here comes the knowledge point of the early preparation: Generally, when making coffee with a cold brew pot, the ratio of coffee powder to water is recommended to be 1:10-1:12, and the coffee beans can be ground into the size of fine sugar~

So we need to prepare:

50g of coffee powder ground into the size of fine sugar particles and 500-600g of cold water. (Most cold brew pots have built-in scales, so this step can be omitted)

Cold Brew Pot Tutorial:

Step 1: Pour the ground coffee powder into the filter and fill it with the prepared water.

Step 2: Put it in the refrigerator for 8-12 hours, then take it out and drink it. Isn’t it super convenient!

Tips:

1. Because the method of cold brewing coffee requires the coffee powder to be in contact with water for a long time, it is recommended to use filtered water containing minerals. (Xiaozijun recommends Nongfu Spring)

2. Cold brew coffee has a rich flavor that can be paired with many different flavors. By adding different juices according to the flavor of the beans themselves, you can research many special drinks!

Moka Pot

The old generation loves to brew coffee with this historic moka pot! It is said that in Italy, more than 90% of families have a moka pot to make coffee. It is a national-level coffee utensil.

The coffee extracted by the moka pot through high-temperature steam will be very strong, but it also has many disadvantages: it is difficult to control the temperature, the contact time between coffee powder and water, poor stability, and the extraction of good flavor, etc. However, the moka pot is not expensive, has a good shape, is highly portable, and~ brewing coffee is so romantic~

Pay attention! Here comes the knowledge point of the early preparation again: Generally, when making coffee with a moka pot, you only need to prepare the ground coffee powder in advance~

So we need to prepare:

Grind the coffee into powder slightly finer than granulated sugar.

Moka Pot Tutorial:

Step 1: Pour water into the lower pot until the water level is below the pressure relief valve (not exceeding the pressure relief valve). The powder tank is filled with coffee powder and tapped to make it flat.

Step 2: Assemble and tighten all the parts of the moka pot and place it on the heating source to slow cook. The coffee will slowly flow into the upper pot along with the water vapor. When no coffee flows out of the upper pot, it is done.

Tips:

1. Do not press the coffee powder in the powder hopper too tightly.

2. There will be a sound of pressure relief during the cooking process, don't worry~

3. The coffee extracted by the moka pot is very strong, close to espresso. It is recommended to add water or milk to mix it.

The drip coffee machine is the ultimate blessing for lazy people! Not only does it require no operation and is easy to clean, but it can also achieve automatic constant temperature and has a large coffee storage capacity. It is a very good choice whether in the office or at home.

In fact, the drip coffee machine is the authentic American coffee invented by Americans. The American coffee with espresso and water that we usually drink in coffee shops is because Americans are not used to the bitterness of espresso, so they came up with the idea of diluting it with water.

Pay attention! Here comes the knowledge point of the preliminary preparation again: Generally, when making coffee with a drip coffee machine, you only need to prepare the ground coffee powder in advance~

So we need to prepare:

Grind coffee into powder the size of sugar particles.

Drip coffee machine tutorial:

Put the ground coffee powder into the powder hopper area and plug in the power.

Tips:

1. The water temperature of cheap drip coffee machines may be unstable, and the spray head range is not wide enough, which may easily lead to insufficient extraction rate.

2. If you are a wealthy person, the expensive drip coffee machine can not only simulate the hand-brew method, but also comes with its own grinder, which can save you the step of grinding coffee beans!

Finally, my favorite drip coffee! In terms of portability, no one can compare to it. One small bag is enough for one person, which is convenient and fast, and the taste is online.

The method of making drip coffee can be said to be a simplified version of hand-brewed coffee. You can experience the unique fun of hand-brewed coffee without paying too much attention to techniques such as water injection, steaming, and powder distribution.

Pay attention! Here comes the knowledge point for the preliminary preparation again: Generally speaking, for drip coffee, the water-to-powder ratio is recommended to be 1:15, and the water temperature should be controlled at 90℃-94℃.

So we need to prepare:

90℃-94℃ hot water, and a cup.

Instructions for drip coffee:

Step 1: Warm the cup in advance, open the coffee bag, unfold the hard ears on both sides, and place them on the cup.

Step 2: Pour in enough water to cover the coffee powder. Steam for five seconds and then continue to add water until the end.

Tips:

1. There is no need to deliberately control the water flow, but it is necessary to prevent the water from overflowing due to excessive flow.

2. There is no need to buy a special hand-brewed coffee pot. (My colleague even uses a kettle to brew hand-brewed coffee)

Today, I will introduce to you these 6 common household coffee utensils and their methods.
