If it is not extracted enough, the espresso will not blend well with the whipped milk. I have heard several times that espresso with a longer extraction time is easier to draw, but high-body or high-TDS espresso is the key to simplifying the production of more beautiful latte art. Low-body coffee liquid will make the latte art "stuck", which will not work when blending and drawing. Therefore, before starting to draw, you must first ensure the extraction rate of the espresso. In addition, the roasting date of the coffee also affects the latte art. Basically, the fresher the coffee, the easier it is to make latte art. However, if you use coffee beans that have just been roasted for 1-2 days, it will be too fresh and it will be easier to produce small bubbles on the surface of the drink, affecting the appearance. Pouring speed In addition to the surface tension of espresso affecting the pattern formation of latte art, another factor that affects the pattern formation is the "pouring speed". Basically, the faster you pour, the faster the pattern will form. This of course depends on how full your cup is. Fast pouring is when you need to wiggle back and forth on the espresso. By wiggling, you can make your pattern appear layered. Slow pouring is generally used to set or draw patterns on the top of the espresso. Sometimes, you must not pour too fast because it will cause a messy pattern. "Wash" means that you need to pour from a high place, and the milk will rush down the milk foam. There are also some things you need to consider when finishing your latte art. Going too fast can distort the pattern, and going too slow can leave a thick, unsightly tail. In some patterns, you may only need to leave half of the tail. In short, if the pattern requires it, try to inject as smoothly as possible and control the speed of the finish. The most important thing when making latte art is to remember that you are not just making a "pattern", but also drawing a beautiful "story".
