First of all, green coffee beans contain a lot of bitter and difficult to digest substances. These substances include tannins, proteins, cellulose, etc. Green coffee beans also contain a high water content, and the taste is very hard and difficult to swallow. Therefore, consuming green coffee beans directly may cause stomach discomfort or digestive problems.

Secondly, after roasting and grinding, the aroma and flavor of coffee can be fully released. By controlling the temperature and time of roasting, the taste characteristics of different types can be changed and the bitter taste can be reduced.
