You must have heard of "cat poop coffee" or "civet coffee", which is made by civet cats (a small mammal native to Southeast Asia and Africa) who ingest green coffee beans and excrete them. The beans are then manually cleaned and the parchment removed before being roasted into cooked coffee beans.

Of course, this isn’t a weird thing anymore, and it’s not the only coffee that’s been processed with the help of animals. Nowadays, there’s also a type of coffee called “monkey coffee” or “monkey parchment coffee” that’s now being produced in India.

The monkeys select the best coffee cherries, pick them, chew them leisurely for a few minutes, and then spit the remaining fruit onto the ground. The coffee beans are usually spit out by the monkeys as well, as they are the seeds inside the cherries and are usually inedible.

After the monkeys spit out the coffee beans, workers will collect them, wash, process and dry them.

After drying, the coffee beans look gray instead of the usual green color of green beans, and sometimes have teeth marks left by rhesus monkeys. After drying, the coffee beans can be roasted and sold like other coffee beans on the market.

You can brew monkey-processed coffee at home just like you would brew coffee beans. Like kopi luwak, monkey coffee tastes very different from typical coffee. The monkey's saliva causes the enzymes in the coffee beans to break down, changing the overall flavor of the coffee.

"Monkey Coffee" is produced in Chikmagalur, India. Chikmagalur is located in Karnataka, India, and is famous for its mountains, beaches and coffee-producing area Coorg, a picturesque area with a high altitude.

The region is lush and green, with hilly terrain and abundant rainfall, and coffee plantations here account for 60% of India's total coffee production. Coffee farms are sometimes planted side by side with forests, and sometimes planted close to other shade trees.

Rhesus macaques live in the natural environment of the forest and occasionally "visit" the coffee plantations. Since the forest is the natural habitat of the rhesus macaques and is adjacent to the coffee farms, farmers have no way to avoid their visits.
