These substances include caffeine, acidic components and aroma substances. If we brew directly with cold water, it is difficult to fully extract these substances because the temperature is not high enough.

3. Coffee beans need to expand

In addition, during the brewing process, the coffee beans also expand. When the hot water comes into contact with the coffee powder, the gas in it begins to be released and makes the particles expand. This process is called "fluffing". In this way, the gaps between the particles can be increased and the water can flow better through the coffee layer. If we brew directly with whole coffee beans, this effect cannot be achieved.
