For coffee lovers, the next step is to brew a cup of delicious coffee by yourself. The hand-brewed coffee we are going to talk about today is not brewed directly with instant coffee. Instead, it is brewed with coffee powder ground from coffee beans. I won’t start from the process of bean selection, grinding, extraction, water, etc., because starting from the selection of beans, the entire process of manually brewing a cup of coffee is complicated and highly professional. For ordinary coffee lovers, the threshold is a bit high and it is difficult to master in a short period of time, and there is no need to do so. Today I will mainly talk about brewing tools and methods, so that you can enjoy the brewing process and easily enjoy a cup of delicious coffee brewed by yourself. Basic tool material preparation Filter cup: Choose a ceramic filter cup for better temperature preservation. Filter paper: Choose wooden or branded coffee filter paper to reduce the possibility of adding fluorescent agents. Coffee powder: Coffee powder can be coarse or fine. For the same brand of coffee beans, coarse coffee powder (right) has a lighter taste, while fine coffee powder (left) has a stronger taste. For those who like a stronger taste, you can add 15 grams of coffee powder to 150-180c.c. of water. For a lighter taste, you can add 15 grams of coffee powder to 300c.c. of water. Hot water temperature: The hot water used in the coffee brewing process should not be hot water that has just been boiled. Too hot water will make the coffee sour. Generally, hot water that has been left to stand for 3 minutes at about 90 degrees Celsius is suitable for the more common medium and dark roasted coffee beans on the market. If the coffee beans purchased are lightly roasted, you can leave it for an extra minute to let the hot water cool down to 80 degrees Celsius. Brewing with an American coffee machine Materials: filter paper, coffee spoon, bottom pot, coffee powder 1. Place the filter paper: Take a piece of filter paper, fold the bottom and side edges one in front and one in back, put it into the filter, pour a little hot water on the filter paper, and make the filter paper fit the filter. Folding the filter paper can prevent the filter paper from breaking during filtering and achieve better filtering effect. 2. Add coffee powder: Pour the coffee powder into the filter paper and filter at a ratio of 15 grams of coffee powder to 300 c.c. of water. 3. Add water: Place the bottom pot under the coffee machine interface, open the water tank and pour in uncooked cold water or cold mineral water, then turn on the power switch. After a few minutes, the American coffee machine will automatically filter and drip out coffee. The time for dripping coffee will vary depending on the amount of coffee powder and water poured in. The machine will automatically set the time to drip out coffee. Brewing with a filter press Materials: filter cup, filter paper, bottom pot, coffee powder 1. Preheat the filter press: Pour hot water into the filter press until it is about 80% full, let the glass bottle preheat, and pour out the hot water after about 2 minutes. 2. Pour coffee powder and hot water: Pour coffee powder and hot water into the filter press, place the inner filter at the mouth of the pot, and after about 23 minutes, press the inner filter down to the bottom of the cup. The inner filter is not pressed down at the beginning, the purpose is to let the coffee powder fully soak before filtering. 3. Filter: If you like a cleaner, smoother taste, you can take another pot, put the filter cup and folded filter paper on it, and then pour the coffee in the filter press into it for filtering. How to make hand-poured coffee Materials: filter cup, filter paper, bottom pot, coffee powder 1. Preheat the bottom kettle: Take a bottom kettle and put the filter cup on it, pour a little hot water on the filter cup, let the bottom kettle preheat and keep warm, put the folded filter paper on the filter cup, pour a little hot water on it, let the filter paper and the filter cup fit together, then pour out the hot water. The filter paper has a barrier effect, so the filter cup cannot be heated, so you need to pour hot water twice before putting the filter paper in the filter cup and after putting the filter paper on it. 2. Pour coffee powder: Pour the coffee powder into the filter cup and tap the filter cup several times with your hand to concentrate the coffee powder. 3. Add hot water: Pour hot water, first pour a little hot water at the center of the coffee powder, then pour hot water from the inside to the outside in a clockwise direction along the coffee powder, and finally pour it from the outside to the inside in a clockwise direction. When pouring hot water, it is recommended to use a kettle with a slender spout, the water flow is thin and consistent, and it is necessary to pay attention to the process without interruption. 4. Drip coffee: When the coffee drips from the filter cup to the bottom pot, if the scale on the bottom pot drips to the required amount of water, the filter cup can be removed from the bottom pot. The easiest brewing method Nowadays, many people also use portable drip-type filter coffee bags to make coffee. When using, first tear open the seal on the top of the coffee bag, hang the dripper on the edge of the cup, and inject hot water. It is recommended to use a hot water cup with a pointed spout and pour in a thin stream of water. Let the coffee bag soak for 12 minutes before taking it out and enjoying it. Transform into fancy coffee The above method can make a delicious cup of black coffee, and you can also use black coffee to make latte and cappuccino. Latte 1. Soak the cup in hot water (warm the cup), let the temperature rise and then pour out the excess water before use. 2. After grinding the dark roasted coffee beans, pour the coffee powder into the tamper and use the powder tamper to flatten the coffee. Then, put the tamper on the extraction port of the espresso machine to extract Espresso. 3. Take an appropriate amount of milk and place it under the steam nozzle of the espresso machine to make a high-temperature mixture of milk and milk foam. 4. Shake the mixture of milk and milk foam up and down to concentrate the milk foam on the top as much as possible. This makes it easier to control the ratio. 5. Shake the milk and milk foam mixture in appropriate proportions to ensure that the milk foam and milk are completely blended. 6. Finally, pour the milk and milk foam evenly into the Espresso, control the flow rate to make latte art, and you have completed a cup of Italian latte. Cappuccino Grind 1.2 spoons of coffee beans into fine coffee powder, and use a coffee machine to make half a cup of espresso as a base. 2. Beat about 200 ml of milk into fine cream-like foam. 3. Use a spoon to scoop out the thickest foam on the top of the whipped milk, and then you can combine the coffee and milk to make various shapes. Coffee cup selection No matter what flavor of coffee you drink, it is recommended to use mugs (left) or wide-mouthed cups (right) as containers for coffee. The thick mug can keep the temperature of the coffee, while the wide-mouthed cup can let you smell the rich aroma of the coffee. If you have a larger budget, you can also choose the more expensive bone china cup, which can keep the temperature better and is lighter in weight.
