Secondly, in terms of color, mature coffee beans appear dark brown or black. This is due to the rich soluble substances and oils inside, which produce aroma and flavor after the roasting process. In addition, a fine and evenly distributed wrinkled texture can be seen on the surface. This texture is called "lace" and is an important indicator of the freshness of the beans and whether the storage conditions are good. Fresh coffee beans usually have clear lace, while aged or damp beans will lose this feature.
