Coffee bean roasting: A cup of fragrant coffee starts with roasting!

The aroma and taste of coffee is inseparable from the roasting process of coffee beans. Roasting is to treat the raw beans with high temperature to evaporate the internal moisture and change the chemical composition, thus producing a special aroma and flavor. Let's take a look at the whole process of making a cup of aromatic coffee from roasting.

First of all, it is very important to choose high-quality coffee beans. High-quality coffee beans usually have higher moisture content and lower impurity content. These factors determine whether the final roasted coffee can achieve the ideal taste.

Next comes the pre-processing stage, also known as washing and peeling, during which the unripe or underripe fruits that fall to the ground to dry naturally are collected and the outer skin and pulp are removed either mechanically or by hand.

The third step is to send the raw beans, which have been washed and dried for a period of time (usually a few days) to reduce the moisture content to a suitable level (about 10-12%), to the green screening machine for screening. This can eliminate beans that do not meet the standards and ensure that only the best quality beans enter the next step of roasting.


Next is the roasting stage. In this stage, the coffee beans are placed in a special roasting machine for heating. Temperature and time are key factors in determining the flavor of coffee. Generally speaking, high temperature and longer time will make the coffee darker, more bitter, and produce a special caramel flavor; while low temperature and shorter time will allow the coffee to retain more of its original flavor.

The final step is cooling and packaging. After the ideal roasting is completed, the coffee beans need to be cooled quickly to stop the heating process and avoid excessive aeration, which will lead to a bad taste. Then they are packaged to maintain freshness.


In summary, the process from selecting high-quality beans to cleaning, peeling, screening, precisely controlled roasting to the final cooling and packaging is crucial to a cup of fragrant coffee. Each link requires the careful control of experienced roasters to finally present a cup of coffee with rich taste and aroma.
