About coffee beans

Good coffee starts with good coffee beans. Coffee can be roughly divided into two varieties: Arabica and Robusta, which account for more than 99% of the world's coffee production.

Among them, Arabica coffee is of better quality, with a softer, sweeter taste and higher acidity because coffee itself contains more sugar and oil.

Robusta, by contrast, is a stronger, richer coffee with twice the caffeine of Arabica. It is often used in espresso blends to give the coffee a richer crema.

About the degree of roasting

The degree of coffee roasting affects the taste of the coffee. During the roasting process, the sugar and fat in the coffee will break down, forming a variety of unique flavors.

The shorter the roasting time, the lighter the coffee is roasted, the purer the taste of the coffee and the stronger the acidity. As the roasting time increases, the color of the coffee will become darker and oil will appear on the surface. Deeply roasted coffee has lower acidity and a stronger and heavier taste.

About Grinding

The coarseness of the coffee powder also affects the taste of the coffee. If it is too coarse, the coffee will taste bland; if it is too fine, the coffee will be too bitter.

The degree of grind of the coffee powder depends on the brewing equipment you use. You need finely ground coffee powder to make espresso, while you need coarser ground coffee powder to make drip coffee.

About the ratio of water and powder

The way coffee is brewed is the key to the final quality of the coffee. If there is too much water, the coffee will be too light; if there is too little, the coffee will taste too strong. The water-to-powder ratio of espresso is usually 1:1-1:3, and the drip coffee is usually around 1:18.

You need to specifically formulate the water-to-powder ratio based on the coffee variety, roasting degree, and grinding degree to ensure that the coffee flavor is perfectly balanced.

About water temperature

The higher the water temperature, the faster the aroma and flavor of the coffee will be extracted. Never use boiling water to brew coffee. The ideal water temperature should be between 91-96℃. If the water temperature is too low, the coffee will taste too light; if the water temperature is too high, the taste will be too bitter.

Because the water temperature of cold brew coffee is very low, it takes about 24 hours to complete the brewing. The coffee produced has a soft, sweet taste and very low acidity.
