Despite the growing popularity of the "specialty coffee" movement, which has always advocated black coffee without milk or sugar, "letting coffee speak for itself", it is understandable that consumers who drink latte, cappuccino and other milk coffees still account for the majority.

The cruel truth: milk coffee is the mainstream!

According to the first beverage industry data report released by "Kamen" and "Meituan Dianping Research Institute" this year, American coffee without milk and sugar has almost fallen off the list; on the contrary, the combination of milk + coffee + sugar is the favorite of the majority of consumers!

So, wake up! Whether you are selling coffee, professional boutique, sentimental atmosphere, or desserts and simple meals, don’t forget to make your milk coffee first!

So how do you choose the right milk and sugar for your coffee? What is the difference between full-fat and low-fat coffee? How do you choose between sugar and syrup?

What kind of milk goes well with coffee?

At present, the most widely used dairy product in the catering industry is milk, and catering milk is mainly divided into two categories:

1. Long-lasting milk.

Long-lasting milk is raw milk that has been sterilized by high pressure or high temperature and is packaged aseptically. It has a shelf life of 3-6 months and can be stored at room temperature.

2. Fresh milk.

Fresh milk is sterilized raw milk that is cooled and packaged. It needs to be refrigerated and has a shelf life of 5-7 days.

Different regions have different milk brands available, so you can refer to the ingredient composition data of the following brands to analyze whether the milk you use at home is suitable. (The first 5 of the following milk products are long-lasting milk, and the last 6 are fresh milk.):

How to distinguish between fresh milk and shelf-stable milk?

Because long-lasting milk is sterilized at high temperature or high pressure, it has a relatively long shelf life and can be stored at room temperature; fresh milk needs to be kept at low temperatures and has a relatively short shelf life. The overall price of fresh milk is higher than that of long-lasting milk, and the transportation cost is higher.

What is the difference between adding fresh milk or long-life milk to coffee?

To know how to choose milk, we must first understand which components in milk affect coffee.

1. Fat.

The milk with higher fat content will have better foam density.

The fat content of long-life milk is concentrated between 3.4 and 3.6 g/100 g, while the fat content of fresh milk can reach up to 3.8 g.

In general, the foam density and foam retention of fresh milk are better than those of long-life milk.

Therefore, if you want a cup of dense and fragrant milk foam to make latte art, choose high-fat milk.

2. Protein.

Milk with a higher protein content will have a more "milky" flavor. Milk with a higher protein and fat content will have a creamier flavor.

The protein content of fresh milk is generally lower than that of preserved milk.

Therefore, if you want milk with a stronger milky flavor, choose milk with relatively high protein content; and vice versa.

3. Carbohydrates.

Milk with a high carbohydrate content is relatively sweeter.

The carbohydrate content of fresh milk is generally higher than that of preserved milk; the sweetness of fresh milk is generally higher than that of preserved milk.

Therefore, if you want sweeter milk, choose milk with a high carbohydrate content.

What kind of sugar is right for coffee?

Before adding sugar to your coffee, think about whether it is really necessary?

A good cup of milk coffee does not actually require additional sugar, because fresh milk already contains natural lactose. The combination of lactose and coffee fat will amplify the natural sweetness. Unsweetened latte actually puts less burden on the human body. But if you feel it is not sweet enough, or want to change the taste and order a mocha or caramel macchiato, we must carefully choose what kind of sugar to add to the cup.

Generally speaking, we add sugar to hot drinks and fructose syrup to iced drinks, mainly because of the solubility problem: sugar is not easily soluble in iced drinks, while syrup can easily lower the drinking temperature of coffee.

When it comes to sugar, consumers also have many choices. Of course, the healthiest and most burden-free option is not to add any sugar at all. But sometimes when we want to change the taste or have special physical conditions, we can choose different types of sugar to meet the needs of the body.

How to choose syrup?

Flavored syrup or simple sugar syrup?

When we choose to increase or decrease the sweetness of sugar, there are two main judgments. One is the flavor syrup, which will add flavor after adding; the other is the base syrup, which has no special flavor after adding, but only increases the sweetness.

For example, we cannot remove the sugar from vanilla latte because if we remove the syrup, the vanilla flavor will also disappear.

How to choose sugar?

White sugar or brown sugar?

As for sugar, the most common ones are white sugar and brown sugar. In terms of sweetness, white sugar has a more concentrated sweetness and dissolves faster; brown sugar has a more natural sweetness and dissolves relatively slowly.

How to choose what sugar to add?

In terms of flavored syrups, common ones include cocoa, vanilla, caramel, hazelnut, etc. Different types of Italian coffee will have different flavored syrups added, for example, mocha will have cocoa (chocolate) syrup added.

Artificial sweeteners mainly include sugar substitutes and sugar balls. The main function of sugar substitutes is that they are low in calories and can also be used by diabetics because they are not real sugars, but just additives with sweet taste.

Sugar balls are commonly known as fructose. They are transparent and colorless, have no special flavor, and only increase sweetness. They are usually used in beverages such as iced milk tea and iced latte.
