Mocha Coffee Mooncake

Steps

1. Mix the ingredients for the crust, milky bean filling, and coffee caramel filling separately, and knead repeatedly until they are completely mixed. As shown in the picture, from left to right are mocha coffee crust, milky bean filling, and coffee caramel filling.

2. Divide the skin and the two fillings into 6 equal parts and roll them into small balls. Take one portion of the milky kidney bean filling, flatten it, and put one portion of the coffee caramel filling on it.

3. Wrap the coffee caramel filling in the center of the milky kidney bean filling. Wrap all 6 portions of filling.

4. Take a piece of dough and roll it into a round shape with a rolling pin.

5. Use a scraper to carefully pick up the round dough on the chopping board.

6. Place the filling prepared in step 3 in the center of the crust.

7. Wrap the filling with the crust. Be careful not to have cracks in the crust and make sure the thickness is as even as possible.

8. Put the wrapped mooncake dough into the mooncake mold and press it into the shape of a mooncake (the mooncake skin itself is non-sticky, and there is no need to apply oil or powder to the mooncake mold). Make all the mooncakes in turn and put them in the refrigerator before eating.

Today, it can not only be used as fillings, but also as the crust of unbaked mooncakes, which looks moist, transparent and delicious. 2. This mooncake is very simple to make. After making the white bean filling, knead different materials into the white bean filling to make the crust and fillings, and then wrap it up. It should be noted that the dough of the crust should not be too soft or too hard. The water content of each person's fried white bean filling may be slightly different. When making the crust, the amount of cooked flour added to the crust should be determined according to the actual situation to make the crust reach the appropriate hardness (the crust hardness should be such that the crust will not crack obviously when rolled out with a rolling pin). 3. Be sure to use pure instant coffee powder, not coffee powder with creamer and sugar. 4. I believe that many friends who have read my blog will have cream caramel sauce at home (click here for the method). If you don't have it, you can use chocolate sauce instead or simply leave it out (if you don't use cream caramel sauce, the amount of cooked flour should be reduced as appropriate to prevent the crust or filling from being too dry). 5. Cooked flour is fried flour. Put the flour in a frying pan and fry it over low heat until it turns slightly yellow. It can be used after it cools down.
