Use time to extract high-cold ice-drip coffee

In this fast-paced society, I don't like to be too fast or too excited. I feel that is a mistake. If you are too hasty, you will lose the details; if you are too excited, you will not be delicate enough. Those wonderful things will rush to the end before you have time to savor them.

I love a "slow" life. I am not a slow person, but I am looking for ways to "slow down" in this "fast" world, looking for a life that is not just muddling along and making do. That is why I am willing to wait patiently for a cup of specialty coffee that takes 20,000 seconds to condense - ice drip coffee.

The biggest difference between ice drip coffee and the ice coffee we usually drink is that it is extracted with cold water, and the long and gentle dripping allows the coffee flavor to be retained more completely in the coffee liquid. The cool taste is also more suitable for summer.

What is ice brew coffee?

Ice drip coffee, also known as Dutch coffee, is said to be because when the Netherlands ruled Indonesia, they planted a lot of strong-tasting Robusta coffee. In order to drink these rather bitter coffee beans in the tropics, they invented a device to brew coffee with slowly dripping cold water.

An interesting phenomenon is that you can hardly find this kind of coffee in the Netherlands, but it has triggered an ice drip trend in Asia. In Japan, ice drip coffee has a history of hundreds of years, so ice drip coffee is also called "Kyoto coffee" and "Japanese-style slow-drip". In South Korea, almost every coffee shop sells ice drip coffee, and you can see many cool ice drip equipment and high-value canned ice drip coffee. Recently, coffee shops in the East Campus of the First Affiliated Hospital of Zhengzhou University have also started selling ice drip coffee. Friends can go and try it.

The difference between iced, cold brew and ice drip

Although you get the same cup of iced coffee, the taste and production process of iced, cold brew and ice drip coffee are very different. The extraction method of cold brew is immersion, while ice drip is percolation. Iced coffee is just hot coffee that has been cooled down, and its taste is far inferior to cold brew and ice drip.

• Hot extraction

Iced coffee refers to cold coffee that is made by quickly extracting coffee powder with hot water and then adding ice cubes or cooling it rapidly. It takes about 2 to 3 minutes to make.

Cold Brew

Cold Brew refers to coffee extracted by soaking coffee powder in cold water below 5℃ for a long time, which takes about 8-12 hours. It is also called ice brewed coffee.

• Cold Drip Coffee

As the name suggests, water-drip coffee refers to the extraction of coffee liquid by dropping melted ice water drop by drop on the coffee powder surface. This extraction method advocates low temperature and slow extraction. The entire extraction process takes about 5-16 hours depending on the amount of powder and the size of the equipment.

Cold brew coffee extraction

Because the method of making ice drip coffee is quite special, it is not just putting the coffee powder in an ordinary container and soaking it in water for extraction. We will need a special ice drip pot or a special combination device to make ice drip coffee.

An ice dripper usually requires four parts:

Part 1 A container that can hold water/ice and adjust the flow rate

Part 2 Container for coffee powder

Part 3: Container for dripping coffee

Part 4 Filter/filter paper

• Basic principles

The key to making ice drip coffee is "cold" and "slow". The ice water in the container at the top of the equipment is controlled by a valve to soak the coffee powder drop by drop. The coffee liquid is filtered once and gradually collected in the pot at the bottom. The whole extraction process takes about half a day.

• Extraction secrets

Water-to-powder ratio: The ratio of coffee powder to ice is about 1:10~12, which can be determined according to personal preference.

Grinding: It is recommended to grind the coffee powder finer to increase the contact area between the coffee powder and water.

Water speed: Slow drip filtering of about 2 drops per 3 seconds (40 drops per minute) is best.

The reason why ice drip coffee is attractive is that it tastes different from other iced coffees and cold brew coffees. Ice drip coffee has a fuller taste and a higher body. The production method of ice drip coffee focuses on restoring the original characteristics of the beans, so whether it is dark roasted or light roasted beans, this method can be used to make it.
