From coffee cherry to coffee: the secrets of the production process

Coffee is one of the most popular drinks in the world, with hundreds of millions of people enjoying this invigorating black liquid every day. However, few people know that behind a cup of delicious coffee lies a complex and delicate production process. This article will take you through the entire process from coffee cherry to delicious coffee.

Picking and processing

A perfectly ripe coffee fruit is the basis for making high-quality coffee. In the plantation, workers will carefully select the fruits with appropriate maturity, bright color, no blemishes and insects for picking. After picking, these fresh and delicious but bitter and astringent coffee fruits will be immediately sent to the processing plant.

In the processing plant, the first thing to do is to wash and peel the picked coffee cherries. Washing can remove surface dirt and keep the cherries clean. Peeling is to separate the pulp from the coffee beans, usually using wet or dry methods.

Wet processing is a traditional processing method that soaks coffee cherries in water and then uses mechanical equipment to remove the pulp from the coffee beans. This method can keep the beans high in quality and acidity and effectively remove impurities in the pulp.

Dry processing is to directly dry the coffee cherries and wait for them to fall off naturally. This method is relatively simple and crude, but it is suitable for areas with hot climates and plenty of sunshine. Coffee beans processed by dry processing usually have some natural sweetness and lower moisture content.

Grinding and roasting

After washing and peeling, the coffee beans need to be further processed to become the aromatic coffee we love. First, they need to be ground, that is, the hard shell that wraps the internal germ (that is, what we often call the "original flavor") is peeled off. This process is usually completed by mechanical equipment, and the degree of grinding can be adjusted according to needs.

Next is roasting, which is the most important step in making coffee. During the roasting process, coffee beans undergo chemical and physical changes, which produce aroma and flavor inside. Different roasting degrees will bring different taste and flavor characteristics. Light roasting produces a light sour taste and light taste; medium roasting has a balanced sweet and sour taste and rich flavor; deep roasting has a strong bitterness and strong fragrance.

Brew and Enjoy

When the coffee beans are brewed at the right time and temperature, we can enjoy a cup of delicious and fragrant coffee. There are many types of brewing methods, including drip, pressure extraction (such as espresso), hand brewing, etc.

No matter which brewing method is used, at this stage, you need to pay attention to factors such as water quality, water temperature, and the ratio between powder and water. Only by combining these factors reasonably can you brew a cup of coffee with a mellow taste and overflowing aroma.

Finally, we can sit down and savor this cup of fragrant coffee comfortably. Whether it is the first cup in the morning or a companion during afternoon tea, every sip brings us satisfaction and enjoyment.

Conclusion

From coffee cherries to aromatic coffee, the production process involves multiple steps and complex operations. Only by carefully treating each step and strictly controlling various factors can high-quality, delicious coffee be produced. I hope that through this article, everyone can better understand and appreciate this artistic and scientific process.
