After being picked and dried after maturity, we see a complete, round and slightly oval-shaped (similar to an oblate) coffee bean. Its surface is smooth and its color is dark brown or black brown. Generally speaking, a lighter color means that the coffee beans are roasted lightly, while a darker color means that the roasting degree is heavier.

Coffee beans have a unique structure consisting of two main parts: the exocarp and the endocarp. The exocarp is a reddish-brown, rough, and easily peelable outer layer. The endocarp is a yellowish-white, fine layer that clings to the seed.

When we cut open coffee beans, we can see that they have another part inside called the endosperm. The endosperm takes up most of the space and surrounds the so-called "heart-shaped" protrusion between the two seeds.
