After being peeled and pulped, coffee beans usually retain a sticky layer of pectin. To remove this layer of pectin, the coffee beans need to be fermented. In the traditional method, farmers place the coffee beans in shallow trays or tanks for fermentation.

Fermentation usually lasts from 12 to 48 hours, depending on the local climate and coffee variety. During this process, the pectin is broken down by microorganisms and a series of chemical changes occur.

3. Washing and sun drying

After fermentation, the beans need to be washed to remove any remaining pectin and other impurities. Farmers wash the beans in a sink and rub them thoroughly to clean them.

After cleaning, the coffee beans need to be dried. In most cases, they will choose to spread the wet coffee beans in a cool and ventilated place for sun drying. This process may take several days or even longer to completely dry.

4. Baking

Once the coffee beans are completely dry, they are ready for roasting. Roasting is one of the most important steps in coffee bean processing and is key to giving coffee its special flavor and aroma.

During the roasting process, coffee beans are heated to high temperatures and undergo chemical reactions, during which the moisture inside the coffee beans evaporates and rich aroma substances are produced.

5. Grinding and brewing

After roasting, the coffee beans need to be crushed for brewing. Usually, people choose to put the whole coffee beans into a special coffee machine or a manual device for crushing.
