Coffee bean production: from picking to roasting, the perfect process of tasting the mellow aroma

Picking coffee beans

The coffee bean production process begins with picking. In the right season, farmers carefully select coffee cherries that are at the right maturity. They use manual or mechanical equipment to remove the coffee cherries from the trees, ensuring that only the best quality cherries are selected.

Peeling and fermentation

Once the picking is complete, farmers will begin removing the outer skin of the coffee cherries. This process can be done either by the washed method, where the cherries are soaked in water and then the outer skin is removed by a machine, or by the dry method, where the whole cherries are directly exposed to the sun to allow them to fall off naturally.

The peeled coffee beans are then placed in a specific environment for fermentation. This stage is critical as it gives the beans their special flavor and aroma. Fermentation usually lasts from a few days to a few weeks, depending on the desired flavor and climatic conditions.

Washing and drying

When fermentation is complete, the coffee beans need to be washed to remove the remaining pulp and other impurities. This process is usually done by washing with water or mechanical friction. The washed beans are then placed in the sun to dry or dried using special equipment.

Drying is a very important step as it prevents mold and bacteria from growing and helps preserve the freshness and quality of the beans. Farmers need to ensure that temperature and humidity are properly controlled to avoid premature dehydration or mold.

Filter and sort

Once the coffee beans are completely dry, they will enter the screening and sorting stage, during which professionals will carefully examine each bean and classify them according to characteristics such as size, shape, color, etc.

Different grades of coffee beans will be stored separately and named according to their flavor characteristics. For example, "Arabica" and "Robusta" are common naming methods.

Baking

The last key step is roasting. In this stage, the coffee beans will be heated to high temperatures to stimulate their internal chemical reactions and give them special flavor and aroma.

The roasting time and temperature can be adjusted to suit different taste preferences. A lighter roast will produce a light and acidic flavor, while a darker roast will produce a richer and more bitter taste.

Coffee tasting

Ultimately, the carefully crafted coffee beans are used to brew delicious coffee. Whether brewed by drip, espresso or other methods, every cup can show the rich flavor of the coffee beans.

From picking to roasting to tasting, every step has an important impact on the final result. Only after careful processing and production can we enjoy the perfect cup of mellow and delicious coffee that makes us intoxicated.
