Carbon dioxide has the important function of preventing the deterioration of the environment around coffee beans (moisture, oxygen). If it is ground into powder, this effect will be greatly reduced. When carbon dioxide evaporates, it will also take away part of the aroma of coffee, so the aroma of coffee powder is not as good as that of coffee beans. If you buy pre-ground coffee in a store and drink it within a few days, the taste will not change much. If you drink it soon, you can compare the freshly ground coffee with the old coffee.
