First, let's look at the coffee tree. The coffee tree is a member of the Rubiaceae family and grows well in favorable climates. When the coffee tree blooms, it produces small, white flowers. These flowers, after being pollinated, gradually turn into red or yellow fruits.


So the question is: what's inside those berries? The answer is: inside each one are two tiny seeds - coffee beans! So in a sense, you could think of the whole berry as a shell (also called the "cherry"), with two seeds (the "beans") inside. But in a more accurate definition, the "cherry" is considered the actual fruit part.


Therefore, coffee beans are actually the seeds inside the coffee cherry. When these cherries are ripe, farmers will pick them and remove the pulp and shell through a series of processing steps to finally get clean coffee beans.
