Maybe it is time to try the hand-brewed coffee course. A cup of real strong coffee can make the whole room fragrant instantly, and the haze of life will become less melancholy because of the awakened "alone exquisiteness".

The shadows of the sycamore trees on Tongren Road let in light and greenery through the French windows. The room was filled with the unique aroma of coffee, and the conversation with the barista King Chan began.

King Chan joked that hand-brewed coffee literally means hand-brewed coffee. This brewing method was first invented by Ms. Melita from Germany in the early 20th century. It was also by chance when she was making coffee at home. She suddenly had the idea to use her son's blotting paper as filter paper, put coffee powder in the filter paper, and use a kettle to pour water into the coffee powder, extracting a cup of coffee with a different taste. Hand-brewed coffee was born.

Compared to machine-brewed coffee, hand-brewed coffee equipment is relatively simple, and most of them do not look particularly complicated, and the operations are very similar. However, it is these subtle differences that contain the possibility of various subtle differences in taste, and even the coffee brewed by the same person each time is not exactly the same. "A perfect cup of hand-brewed coffee requires the brewer to have at least 5 years of coffee experience. Not only must he be skilled, but he must also be able to adjust the brewing method according to different varieties, water temperature, and drinker's preferences, so that the coffee always presents a perfect balance of sweetness, sourness, bitterness, mellowness, and fragrance in front of people." It can be said that a cup of good hand-brewed coffee teaches urban people about the refinement of "slow life".

Of course, it was the Japanese who really made hand-poured coffee popular. Since the 1950s, the Japanese have been obsessed with hand-poured coffee. Various types of filter cups and drip coffee filters have emerged one after another, and a complete set of theories and operating techniques for hand-poured filter coffee has been established, which has also made this traditional way of hand-poured coffee take root and flourish in the East, and has achieved unprecedented prosperity.

The roasting degree of the beans is the soul of hand-brewed coffee. Take the Starbucks we usually drink for example. Starbucks uses deeply roasted coffee beans. The advantage of such beans is stability, but stability is also the shortcoming of Starbucks because of the lack of changes and surprises (no matter which country you buy Starbucks in, it will always taste the same, and the standard does not change).

A good cup of hand-brewed coffee tastes sweet first, followed by sourness, without any bitter or astringent taste. "Any deviation in the production process will affect the final taste of the coffee, which is also the criterion for judging the quality of a cup of coffee." It is precisely because of all kinds of mysterious uncertainties that tasters have expectations for the coffee they are about to drink. The concentration, rigor, and rationality of the barista make the whole process of tasting hand-brewed coffee more romantic.

After a long period of development, there are many hand-brewed coffee utensils. In each hand-brewed coffee course, the barista will randomly select 4 different coffee brewing utensils and use the same coffee beans to let the students experience the different tastes presented by different utensils. The subtle differences are simply intoxicating.

Like the tea ceremony, hand brewed coffee also requires similar steps to warm the kettle.
