Secondly, the medium (or city/American) roast is when the coffee beans are roasted slightly hotter for a longer period of time, making them darker in color and slightly oily on the surface. At this level, the acidity is reduced but still present, and some sweetness and balance are added. Medium is suitable for most people, especially those who like a balanced taste that is not too acidic or bitter.


Thirdly, deep roasting (also known as French/Italian roasting) means heating the coffee beans to a higher temperature to fully release the oil on their surface. At this level, the coffee beans appear dark or even black, and the bitterness is significantly enhanced. Deep roasting is usually suitable for people who like strong, bitter and caramelized flavors.

Finally, when choosing the roasting degree of coffee beans, you also need to consider your personal taste preferences and usage. If you plan to use it to make espresso (such as Italian espresso), medium to dark roasting may be more suitable; if you like hand-brewed or drip coffee, you can choose medium to light roasting.
