First, let's look at the traditional medium roast. This method aims to preserve the original flavor of the coffee beans and roasts them at a medium degree. The result is a cup with a balanced taste, moderate acidity, and a slight chocolate or nutty aroma.

Finally, there is a relatively new roasting technique known as light roasting or "third wave" roasting. This method emphasizes single origin, specific varieties, and fine processing. Light roasts are usually performed at medium to light color and are designed to highlight the flavor characteristics of the bean itself. The result is a clear and bright cup with high acidity and rich floral and fruity aromas.
