Light roasting retains the original flavor and has a certain acidity; medium roasting is more balanced, with relatively high acidity and sweetness; dark roasting has a strong taste and obvious bitterness.

Another important distinction is how the coffee beans are processed. Dry processing involves drying the cherries, removing the shells, and then roasting them. This process usually produces some fruity flavors and acidity. Wet processing involves peeling the cherries, fermenting them, washing them, and then drying them. This method usually produces a cleaner and more balanced taste.


Finally, you also need to consider the choice of single variety or blend during the selection process. Single variety refers to beans produced by the same type of coffee tree, while blends are a mixture of beans produced by different types of coffee trees. Single varieties often have unique flavors and characteristics, while blends can combine multiple flavors.


To sum up, when choosing coffee beans, you need to consider factors such as origin, roasting degree, processing method, and single or mixed, and choose coffee beans that suit your taste based on your own preferences.
