The difference between natural and washed coffee beans: which processing method is more suitable?

First of all, sun drying is a traditional method of processing coffee beans. In this process, freshly picked coffee berries are placed in the sun to dry. This can separate the pulp from the beans and also give the coffee beans a special flavor and aroma. Washing, on the other hand, involves soaking the picked coffee berries in water for fermentation, washing, and other steps before drying.


Secondly, in terms of taste, there are also some differences between natural and washed coffee. Since the natural method retains the complete skin and the internal mucus layer (called honey), it produces a more intense, complex and naturally sweet flavor; while the washed method focuses more on removing the pulp and other impurities, making the coffee beans more refreshing, bright, and more acidic. Therefore, if you like a strong and naturally sweet coffee taste, then the natural method may be more suitable for you; if you prefer a refreshing and acidic taste, then the washed method may be a better choice.


Finally, in terms of environmental protection, the water-washing method has certain advantages over the sun-drying method. In the water-washing process, a large amount of clean water is used to remove the pulp and impurities, and energy is consumed for fermentation and other steps. The sun-drying method only relies on natural sunlight to complete the drying process, and does not produce additional waste or pollutants. Therefore, as environmental awareness becomes more and more important today, the sun-drying method has also been favored by some people.
