Cold brew coffee has much lower acid than regular coffee, which means that cold brew coffee will not irritate the stomach.

That's why Max Lowery, author of The 2 Meal Day, says he only drinks cold brew coffee.

"I didn't like coffee very much in the past because I was very sensitive to caffeine. But since the end of last year, I have developed a habit of drinking coffee every day," he said. "Since I don't eat at noon, I tried drinking coffee on an empty stomach, but after drinking it for 10 days, I had severe gastrointestinal discomfort."

To this end, Lowery conducted an in-depth investigation and found that many people also experienced the same symptoms after drinking coffee on an empty stomach. "I found that this is a common problem." He said, "Coffee contains a lot of acid, which will irritate your gastrointestinal tract. Maybe there are still many people who are experiencing the same pain, but they don't know that the root cause is coffee!"

Further research led Lowery to discover that cold brew coffee is 70% less acidic than regular coffee.

"Extracting coffee at low temperatures can significantly reduce the acid content of coffee," said Grant Gyesky, CEO and founder of RISE Brewing Co.

The reason is: all coffee beans contain oils, which contain organic acids. When brewing with traditional hot water, the water temperature usually reaches about 94 degrees Celsius. At 60 degrees Celsius, the oils will release fatty acids, making the coffee sour.

By extracting at low temperature, these fatty acids will not be released. Therefore, the acidity of cold brew coffee is about 70% lower than that of ordinary hot coffee, thus avoiding symptoms such as gastrointestinal discomfort in people. "

Lowery found that cold brew coffee was also sweeter than regular coffee. He now brews his own cold brew at home, adjusting the strength and steeping time of the coffee himself.

He also found that cold brew coffee helped him eat intermittently and provided him with extra energy when he was not eating. In addition, cold brew coffee is not suitable for adding milk because the taste of cold brew coffee itself is very acceptable.

“The great thing about cold brew is that it tastes very sweet and you don’t have to add any sugar or milk,” Lowery said.
