It’s true, coffee tastes salty!

Have you ever had coffee that tasted weird ? Like a cup of salty coffee?

Coffee generally has four flavors: sour, sweet, bitter, and salty? Sour, sweet, and bitter are the three most common flavors in coffee, so where does the saltiness in coffee come from? Why is coffee salty? Is it related to factors in the coffee brewing process?

The saltiness of coffee is related to the minerals contained in the coffee beans, such as chloride, bromide, iodide, nitrate, and other inorganic compounds, which account for 14% of the weight of the soluble flavor of coffee. Because coffee usually tastes sour and sweet, the saltiness of coffee is not obvious.

There are several reasons why coffee can be salty :

1. The coffee quality is defective

If coffee beans are mixed with stale beans, unripe beans, over-fermented washed beans, over-fermented sun-dried beans and honey-processed beans, the coffee will taste salty. If you smell the saltiness of the coffee during the roasting process, it means that the coffee beans are defective and will also cause the coffee to taste salty.

2. Coffee roasting is defective

The flavor of deeply roasted coffee is generally burnt and bitter, in addition to a salty taste. The organic acid content in deeply roasted coffee beans is much lower than that in medium- and light-roasted coffee beans. Therefore, if the coffee beans are deeply roasted and not very fresh, the brewed coffee will taste salty.

3. Flawed coffee extraction

When brewing coffee, if it is light roasted coffee with insufficient extraction or high concentration coffee, it is easy to taste salty, because the sweetness in the coffee is not extracted, so the acidity is very high and the sweetness is not enough, which makes it sour and bitter. Such coffee is easy to taste salty.

Coffee can have a variety of flavors, but if you drink salty coffee that tastes weird, it may be because you didn’t pay attention to the above three key factors . In short, you didn’t make the coffee right!
