When a civet eats a cherry, the pulp it contains is broken down by its digestive system and absorbed as nutrients. However, the outer layer of the coffee bean is indigestible and is processed through a series of chemical reactions in the civet's stomach.

3. The role of enzymes

In the civet's stomach, there is a special enzyme that breaks down the protein contained in the outer layer of coffee beans and converts it into simpler, more easily absorbed substances through a fermentation process.

4. Fermentation process

When the coffee beans come into contact with the civet gastric juices, an important fermentation process occurs. This process lasts about 24 hours, during which time bacteria and microorganisms further break down the coffee beans and produce special compounds.

5. The flavor becomes richer

Due to the digestion and fermentation process, civet coffee beans contain many special and complex aroma components, which give them rich, smooth, naturally sweet and fruity characteristics.

6. Coffee bean picking and processing

Farmers collect the digested and fermented coffee beans in the forest after civets excrete them. The beans are then washed, dried and the outer pulp removed. They are then sent to roasters for further processing.

In the roasting plant, the civet coffee beans are properly processed according to different taste requirements. Usually, they are lightly roasted at a lower temperature to preserve their special flavor and aroma.
