Planting and harvesting

Coffee trees are planted in suitable climate and soil conditions. When the trees reach a certain height, they produce white flowers. These flowers change color over time and eventually form red or yellow fruits.

Farmers pick the fruits when they are fully ripe. They remove the fruits from the trees by hand or by machine, making sure to select only those that are fully ripe and of good quality.

Peeling and fermentation

After picking, the coffee cherries are peeled off their outer skin and flesh. This process can be done by hand or by machine.

After peeling, you get the pulp containing two seeds (i.e. coffee beans) and a layer of mucus-like substance. In order to remove this layer of pulp, the coffee beans will be placed in large fermentation tanks for fermentation. This process usually takes one to two days.

Wash and dry

After fermentation, the beans are washed to remove any remaining pulp and other impurities. Farmers place them in a tank where water flows through the beans.

After washing, the beans need to be dried. Drying in the sun is one of the most common methods. Farmers spread the beans out on large platforms and turn them regularly to ensure even heating.

Baking

When the beans are completely dry, they are ready to be roasted. Different types of coffee will have different degrees of roasting.

Light roasting can retain more original flavor and aroma and make the taste softer; while dark roasting can bring a richer, bitter taste and darker appearance.

Grinding and Brewing

After roasting, the coffee beans need to be ground into a powder for easy brewing. This process can be done using a manual or mechanical coffee grinder.

Finally, mix the coffee powder with an appropriate amount of water and heat it to get our favorite cup of fragrant coffee.
