1. Picking and peeling

Soaking and fermenting help remove the pulp and prepare the fruit for the next step of peeling. At this stage, farmers can choose to use dry or wet methods to process the fruit.

2. Dry method and wet method

a) Dry method:

The dry method is one of the traditional processing methods, in which the whole ripe fruit is dried in the sun until it is completely dry. The outer dry skin and pulp of the fruit are then removed by rolling or rubbing. This method is suitable for dry climate conditions and requires a longer processing time.

b) Wet method:

The wet method is a newer processing method that soaks the coffee beans in water before removing the skins. The pulp is then removed from the beans using a machine and further cleaned and separated through a fermentation process. This method completes the process faster and produces cleaner, better tasting beans.

3. Fermentation and cleaning

Regardless of the processing method used, fermentation and cleaning steps are required after peeling.

Fermentation helps to eliminate the pectin remaining on the coffee beans and provides conditions for the production of special flavors during subsequent roasting. Washing is to thoroughly wash away all impurities so that the coffee beans can reach the best quality.

4. Drying

After fermentation and washing, the coffee beans are spread out on drying tables to dry in the sun. This process requires patience and time, as the coffee beans must be completely dry before they can be stored and transported.

5. Grading and screening

Once the coffee beans are completely dry, they are sent to the grading and screening process, during which workers sort the beans according to characteristics such as size, shape, and color.

Only coffee beans that meet certain standards can enter the next stage and become high-quality single origin or blended coffee.

6. Baking

The last key step is roasting. Different degrees of roasting will produce different flavors of coffee. From light to dark, they are: light roast, medium roast, medium dark roast and dark/dark roast.

Each type has its own particular flavor and aroma, and it is important to choose the roast level that suits your taste.
