Hand pour, drip kettle

The hand-pour and drip kettle seem to have been invented by the French, but it was the Japanese who made it popular, so most of the hand-pour equipment on the market comes from Japan. Its basic structure is a funnel drip cup, a receiving cup, and a long-mouthed hand-pour kettle.

Of course, there are many kinds of pots developed based on this structural principle. For example, filter paper, filter mesh or cloth are used in drip cups, and hand-brewed pots and drip cups of different materials, shapes and functions are used. In addition, fully automatic drip coffee machines are also very common. Here is a brief introduction to the more traditional and common hand-brewed coffee.

How to use

1. Use a water temperature cup and heat the appropriate amount of hot water at a preset ratio.

2. Pour the ground coffee powder evenly into the drip cup covered with filter paper, and shake it slightly to spread it flat.

3. Slowly pour in hot water, usually twice, starting from the center of the coffee powder and spiraling to achieve a uniform steaming effect.

4. Pay attention to the water volume control and wait for the dripping to be completed before enjoying.

Coffee made using the drip method can be easily controlled in terms of extraction level, and a coarser powder is generally used to ensure that it is not over-extracted or difficult to drip. Different filter devices can be used to enrich the taste, and it tastes cleaner than a French press. The drip coffee machine commonly used by Americans is just a OEM machine for this method, and the coffee drip bag brewing method preferred by the Japanese also uses the same principle.

Basic equipment for hand pouring:

The most basic equipment needed for hand-brewed coffee is a grinder to crush the coffee beans, a filter cup and filter paper to filter the coffee, a sharing pot to hold the coffee after extraction, a hand-brewed pot for flushing water, and an electronic scale to weigh the beans.

French Press

French press is also known as French filter press, tea maker, or French Press. It originated in France around 1850 and is a simple brewing device consisting of a heat-resistant glass bottle (or transparent plastic) and a metal filter with a pressure rod. It was originally used for brewing black tea, so some people also call it a tea maker.

The principle of brewing coffee with a French press is to use the immersion method to release the essence of coffee through the immersion method of water and coffee powder in full contact. It is suitable for coffee powder with both strong and light flavors.

How to use

1. Use water to warm the French press pot and coffee cup. Warming the cup can ensure that the coffee is brewed at a sufficient temperature and ensure the taste.

2. Pour out the water and put an appropriate amount of ground coffee powder into the French press (pour the ground powder suitable for the coarseness of the French press according to the cup size of the pot)

3. Slowly pour in hot water (90~96 ℃), stir evenly and cover and simmer for 4 minutes

4. Slowly press the lever to the bottom, pour the coffee into the warmed coffee cup and enjoy it.

The French press uses a metal filter to filter the coffee powder. The pore size of the filter is relatively large compared to the filter paper, so insoluble substances will remain in the coffee liquid, making it taste heavier and grainy. However, it does not have much impact on the flavor.

Ice drip coffee maker

The ice drip coffee machine, also known as the ice brew coffee machine, originated in Europe. Since the coffee distiller was invented by the Dutch, some people call the coffee extracted by this vessel Dutch Coffee, distilled coffee, or drip coffee.

Cold brewed coffee is not "coffee liquid + ice cubes", absolutely not; it is a reasonable ratio of ice cubes and water, which drips on the coffee powder roasted by special process at a "drip" speed through the natural osmotic water pressure of condensation; if you want to drink a cup, you need to make an appointment six hours in advance. The advantages of cold brewed coffee are that it is not sour and has low caffeine. It can be stored in a glass container for a week, and the flavor gradually improves. Of course, you need to use an ice cup. It is not just a kind of utensil, but a perfect combination of craftsmanship and culture.

How to use

1. Close the water drop adjustment valve first

2. Pour appropriate amount of cold drinking water into the water bottle according to the number of users. The standard amount of water for one person is about 120CC.

3. Wet the filter cloth with water and put it into the coffee powder cup

4. Put the appropriate amount of coffee powder into the coffee powder cup

5. Finally, place the pill-shaped filter paper on the center surface of the coffee powder (special No. 6 pill-shaped filter paper for drip coffee maker)

6. Open the water drop adjustment valve to let water drop out of the water bottle and let it drip onto the pill-shaped filter paper.

7. Enjoy delicious coffee

In short, if you want to get a cup of delicious iced drip coffee, you need to wait patiently, and it will not let you down.

Siphon coffee maker

Siphon coffee maker, also known as [distillation] or [syphon] coffee pot. It is a brewing method that uses vacuum and distillation principles to extract the essence of coffee; it is divided into an upper pot and a lower pot, with a filter cloth placed at the bottom of the upper pot to filter the coffee powder; pour the ground coffee powder into the upper pot, add water to the lower pot and boil it, when it reaches a certain temperature, the boiling water in the lower pot will rise to the upper pot, stir appropriately to fully extract the coffee powder, then turn off the heat source and cool the lower pot with a wet towel; you can enjoy a relatively accurate cup of coffee! However, the same raw materials, the same utensils, the same operator, and different stirring frequencies will produce different tastes.

How to use

1. Put water in the lower part of the pot, put coffee powder in the upper part, and add hot water

2. After heating and boiling, insert the coffee container on the top of the water container, paying attention to the sealing

3. The boiling hot water will automatically be pressed to the upper part due to the pressure of the steam and mix with the coffee powder.

4. Observe the situation and continue to cook until all the water is pushed into the upper half of the pot, then turn off the heat source.

5. Try to cool the lower pot with a wet cloth or other methods to let the coffee liquid return to the lower pot and pour it out to enjoy.
