Picking coffee beans

The whole process of coffee beans begins when they are carefully picked. In the plantation, farmers carefully select the coffee cherries that are at the right maturity for picking. They use manual or mechanical methods to peel the coffee cherries from the tree and collect them into baskets or containers.

Processing and peeling

Once a sufficient amount of coffee cherries have been collected, farmers will transport them to the processing plant for processing. First, they will wash and sort the cherries to remove any impurities and unripe cherries.

Next comes the skinning process. There are two common methods for removing the outer skin of the coffee cherry: dry and wet.

Dry Processing

In the dry process, the whole coffee cherry is left in the sun for several days. Over time, the outer skin gradually dries out and becomes brittle, at which point it can be easily peeled off.

Wet Processing

In contrast, in wet processing, the coffee cherries are first soaked in water. The outer layer of the cherries is then mechanically peeled off. This process produces a lot of wastewater and coffee cherries.

Fermentation and washing

Whether dry or wet processing, the coffee beans need to be fermented and washed next.

During the fermentation process, coffee beans are placed in specific containers and the right amount of water is added. This process can take hours or days, depending on the desired flavor profile.

After fermentation is complete, farmers wash the beans thoroughly with water to remove any residue. This step is very important because it will directly affect the taste of the final roasted coffee.

Drying and sorting

After washing, the coffee beans need to be dried to restore their proper moisture content. Usually, a few days of drying in the sun will achieve the ideal condition.

Over time, the coffee beans are screened, sorted and graded throughout the process. This is to ensure that only the best quality beans make it to the next stage in order to create a great tasting coffee.

Baking

After a long and delicate process, the coffee beans are finally ready for roasting. At this stage, farmers place the beans in special roasting machines that heat them at high temperatures.

As the temperature rises, the water inside the coffee beans begins to evaporate and chemical reactions occur. These reactions cause changes in color, aroma and taste.

Depending on the degree and duration of heating, coffee with different flavor characteristics and concentration levels can be obtained. From light roast to dark roast, each has its own unique and pleasant flavor.

The final step is to deliver freshly roasted coffee beans to consumers, who can then enjoy their rich aroma and rich taste by brewing them.
