Professional barista Ji Ming teaches us how to easily make a cup of good coffee at home, including the required equipment, technical essentials, precautions, etc.

TO: What tools do you need to make coffee at home? How much do they usually cost? Where can you buy them?

That is, bean grinders, coffee pots or coffee machines, etc. The price of coffee beans varies depending on the variety and roasting. Generally, the price of a 250-gram bag of coffee beans may range from 40 to 100 yuan.

If you are new to coffee, you can choose some simple-to-use utensils, such as French press, siphon, mocha, Vietnamese, hand-drip, etc. Domestic siphons are generally around 200 yuan, while imported ones are 400 to 500 yuan. Common household coffee utensils such as Vietnamese, French press, and hand-drip are generally priced within 100 yuan. Beginners can use an easy-to-use electric grinder, which costs several hundred yuan. Enthusiasts usually use hand-cranked grinders, which generally cost around 100 yuan.

It is better for beginners to buy through trading companies or coffee training schools so that they can learn how to use it on the spot.

TO: How to make a simple yet professional cup of coffee?

Taking Vietnamese coffee as an example, you need to prepare a Vietnamese pot, 15 grams of coffee beans, a warmed coffee cup or a small coffee pot, 94°C hot water and an appropriate amount of condensed milk.

First, grind the coffee beans into medium-coffee powder. If the coffee powder is too fine, it will leak out of the filter and the coffee you make will feel like your mouth is full of grounds. If it is too coarse, it will not be extracted well.

After grinding the coffee powder, take the filter plate out of the Vietnamese pot, pour the coffee powder into the pot, shake it flat, and put the filter plate back into the pot.

Pour an appropriate amount of condensed milk according to your preference, place the Vietnamese pot with coffee powder on the warmed coffee cup, pour in hot water, and wait for two to three minutes. While waiting, observe the speed of coffee dripping. If the speed is too slow, it means that the filter plate is pressed too tightly. You need to loosen the filter plate appropriately to speed up the dripping speed. After the water drips out, stir the coffee and condensed milk evenly, and you can enjoy a cup of Vietnamese coffee.

TO: Notes on coffee powder extraction:

• The water temperature should be controlled at 90-95℃. If the temperature is too low, the aroma of the coffee cannot be fully released; if the temperature is higher than 95℃, the aromatic substances in the coffee will be destroyed instantly when brewing with hot water.

• The coffee cup or coffee pot used to hold coffee must be warmed. A cold coffee cup will affect the volatilization of aromatic substances.

• The coarseness of the coffee powder must be adjusted according to the selected coffee vessel. The coffee powder used in the semi-automatic coffee machine is the finest; while the grinding degree of small coffee vessels such as syphon pots, Vietnamese pots, hand drip pots and Vietnamese pots will be relatively coarse.

TO: How do coffee experts like you drink coffee?

I am a lazy person, and I usually choose the simplest brewing method at home - French press, which is the most suitable brewing method for tasting single-origin coffee, and can well highlight the natural flavor of various origin coffees. I personally prefer Ethiopian Harar coffee, which has a mellow and slightly sour taste.

TO: Any tips from exclusive experience as a barista?

It is recommended to buy coffee beans from the origin and match them with a suitable coffee pot. It is not recommended to use a more professional semi-automatic coffee machine from the beginning. It is not recommended to buy coffee utensils online. Try to buy freshly roasted coffee beans. Only by constantly tasting good quality coffee can your taste buds continue to improve.
