How to choose the roasting degree of coffee beans

Choosing the roasting degree of coffee beans is one of the important factors that determine the taste and flavor of coffee. Different roasting degrees will bring different characteristics to coffee, from light roasting to dark roasting, each stage has its own unique flavor and applicable occasions. Here is how to choose coffee beans that suit your taste.


Light roasting means that the coffee beans are gently heated at a low temperature, turning them into a light brown color and retaining the acidity and aroma of the original origin. This degree is often called "city" or "Asian" roasting. Lightly roasted coffee has bright and refreshing characteristics, obvious floral and fruity aromas, high acidity and is easy to identify. If you like a fresh, bright taste with a citrus or fruity fragrance, then choosing light roasting would be a good choice.


Medium to medium dark (Full City) Between caramel and crispy: This degree is often called "Full City" roast. The coffee beans are heated at a medium temperature, turning them into a medium brown color with some caramel and crispy flavors. This degree of coffee has a rich taste, moderate acidity, and also a certain bitterness and sweetness. If you like a balanced, rich but not too strong taste, then choosing Full City roast would be a good choice.

Dark roasting means that the coffee beans are heated at high temperature until they are dark brown or black, and the oils on the surface are fully released. This degree is usually called "French" or "Italian" roasting. Dark roasted coffee has a strong and powerful flavor, with lower acidity but more prominent bitterness and sweetness. If you like a thick, rich taste with obvious bitter chocolate or carbonization, then choosing dark roasting would be a good choice.
