The reason why coffee beans have a rich oily appearance

Coffee beans are a widely used beverage ingredient, and their appearance is usually characterized by a strong oily texture. This phenomenon is mainly caused by the oil content in the coffee beans themselves.

First, coffee beans are rich in caffeine. Caffeine is a natural compound that plays a protective role in plants. When plants are subjected to external environmental stress, such as ultraviolet radiation, temperature changes, etc., they produce more antioxidants to cope with these stresses. While growing on coffee trees, sunlight and climate change will affect them. In order to protect themselves from damage and increase their chances of survival, coffee trees will accumulate more antioxidants - including rich oils.



Secondly, it also plays an important role in the roasting process. Roasting is to heat the coffee beans that are clean, free of impurities and less than 12% moisture after unprocessed or fermented processes to a certain temperature to evaporate the internal moisture and produce chemical changes. Under high temperature, the oil inside the coffee beans will gradually be released and infiltrate the bean skin to form a layer of oil.

In addition, coffee beans also contain a large amount of monounsaturated fatty acids. These unsaturated fatty acids are one of the important nutrients required by the human body and are beneficial to cardiovascular health. Moreover, during the roasting process, these unsaturated fatty acids will be oxidized to produce volatile substances with a special aroma. Therefore, when tasting coffee, we can feel the aromatic smell emanating from it.

In summary, the rich oily appearance of coffee beans is mainly due to the fact that they are rich in antioxidants, which are released after roasting and contain rich monounsaturated fatty acids. This characteristic also provides the basis for us to taste the rich aroma and rich and diverse taste.
