Coffee bean processing methods explained: From picking to roasting, understand the whole process of coffee beans

Coffee beans are a common beverage ingredient in our daily lives. They go through a series of processing steps to become the coffee we love. From picking to roasting, let's learn about the whole process of coffee beans.

First of all, picking is a very important step in the entire processing process. The fruits on the coffee trees are called "coffee cherries". When the cherries are fully ripe, farmers will pick them by hand or machine. This link requires great caution and patience, because only fully ripe and good quality cherries can produce high-quality coffee beans.


Next comes the peeling and fermentation stage. During this stage, farmers peel the cherries they have picked and separate the remaining pulp from the seeds inside. Usually, two methods, water washing or dry processing, are used in this process. The water washing method is to soak the pulp in water to make it easier to remove; while the dry method is to directly dry the pulp in the sun before peeling. Subsequently, the coffee beans will be fermented under a specific environment, a process that can help the beans obtain better flavor and aroma.

The last stage is roasting. After fermentation, coffee beans need to be roasted to achieve the best taste. Roasting is the process of heating the raw beans to a certain temperature and controlling the time to evaporate the internal moisture, produce chemical reactions and change the flavor. Different degrees of roasting will give the coffee different tastes and aromas. From light to deep, there are light roasting, medium roasting, deep roasting and other options.
