How to choose coffee equipment? Comparison of 11 types of equipment and brewing methods

There are many kinds of coffee brewing equipment all over the world, such as hand brewing/siphon/moka pot/French press/Aeropress/smart filter cup, etc. Each one can brew different coffee flavors. Coffee brewing can be roughly divided into several variables for discussion, namely powder-water ratio, grinding degree, water temperature, brewing time, water quality, and equipment. Today, I will introduce to you several common coffee utensils in the home, and see how they are different!

Start with filter extraction:

1. Hario V60

The inventor of the Hario V60 drip cup combines chemistry, glassware and coffee. The name V60 comes from its 60° cone angle, and the materials used have been ceramic, glass, plastic and metal. The final version of the V60 uses a copper filter cup, which is designed for high thermal conductivity to achieve better extraction with better heat retention.

The V60 caters to the many variables in coffee making, mainly in the following three aspects:

1. 60-degree cone: This prolongs the time it takes for water to flow through the coffee grounds to the center.

2. A large filter hole: This allows us to control the flavor of the coffee by changing the flow rate of water.

3. Spiral pattern: This allows air to escape upward from all sides to maximize the expansion of the coffee powder.

Recommendation: V60 has a fast water filtering speed, and medium-fine grinding is recommended. The water injection method is free as long as it is uniform enough.

Flavor characteristics: Bright, clean and refreshing.

V60 Brewing Tutorial:

Brewing time: 2 minutes to 2 minutes 30 seconds

1. Fold the filter paper and place it in the filter cup with boiling water to pre-wet it; rinse the filter cup and warm your lower pot.

2. First put a few beans in the grinder and wash them, then grind 15 grams of coffee as coarse as salt.

3. Use a thermometer, or, just wait 30 seconds, the temperature will be around 93.

4. Place 15 grams of ground coffee into the filter cup and tap it gently on the side to ensure the grounds are flat.

5. Pour water in 3 times in total. Start the first pour, starting in the center and angling in a steady spiral towards the edges. The first pour is 30 ml of water. Use a teaspoon to gently stir the grounds. This ensures that all the grounds are moistened. Start the timer and wait 30 seconds.

6. Pour to 150 ml for the second time.

7. Pour the mixture for the third time, add 70 ml of water, total water volume 250 ml, add a teaspoon and stir. The total time is between 2 minutes and 2 minutes 30 seconds.

8. Pour into a cup and enjoy! Letting your coffee cool down allows you to enjoy the different flavors.

2. Kalita Wave

【Kalita Wave】 is a flat-bottomed hand brewing filter cup from Japan. The flat-bottom design allows for more complete extraction. The difference between KalitaWave and the familiar HarioV60 is that the bottom is flat. Although the aroma and flavor changes of hand brewing with a cake cup are not as strong as those of a conical filter cup, the overall flavor of the beans and the solid taste and sweetness are always great. Combined with the Kalita filter paper, a wave filter paper specially designed for cake cups, and the specially deepened side drainage grooves, you will have a better hand brewing experience.

Recommendation: The Kalita Wave drip filter is suitable for medium grinding. It is recommended to grind it a little coarser than the grind you use with the v60. This filter is slow to drain water. Of course, thick and high-quality filter paper is definitely a major focus of Chemex, because it makes the coffee it brews taste cleaner.

Suggestion: Chemex extraction is actually a method between pourover and immersion. The reason why American coffee shops like to use it so much is that this feature allows Chemex to be operated in a fool-proof manner without requiring difficult skills. Therefore, you can steam with Chemex, but you don’t need to cut off the water supply. Just add water all at once.

4. American drip filter

Advantages: Easy to clean and use.

Disadvantages: The water temperature of the machine is unstable, and the spray head is not wide enough, resulting in the coffee powder not being properly extracted. Good machines are usually more expensive.

Recommendation: If you are busy or the environment does not allow much operating space, you can choose a simple and fast American machine, because its output can actually be very stable.

The following is an immersion extraction:

5. Smart Cup

Clever Coffee Dripper——Clever Coffee Dripper combines the advantages of French press and hand brewing pot, which is simple, convenient and easy to use. If you find it difficult to master the stable water flow and cannot accept the fine powder of French press, then Clever Coffee Dripper is an easy-to-use and flavorful choice.

The secret of the smart cup is that there is a piston at the bottom of the cup. The middle part is usually in a submerged state (there are four legs underneath, keeping it suspended in the air). After pouring water into it, it is closed under pressure, and the piston firmly blocks the water flow. When it is placed on a container, the piston below is lifted up and the coffee flows out.

Brewing steps:

1. Fold the filter paper, put it in the smart cup, wet the filter paper with hot water to take away the smell of the filter paper;

2.15-16g powder, grinding degree BG 5R slightly coarse (China standard No. 20 sieve pass rate 64 %), water-powder ratio 1:15;

Method: Pour the ground coffee into the smart cup, flatten it slightly with your hands, then add 225g of 93-degree hot water to soak all the coffee powder, steam it with 30g of water for 30 seconds, and then add water in large stream to 225g;

Place it on the sharing pot at around 1:30 seconds and wait for the water to completely drip down. It takes about 20 seconds to drip down and it will be finished in about 2:05 seconds.

3. Place the smart cup on the sharing pot and drink it after all the coffee liquid is filtered out.

Suggestion: In fact, it should be called the "fool cup" or "rookie cup", because even a rookie can easily get started.

There are just a few things to note:

1. The powder volume reaches 1/3 of the filter cup.

2. Except when adding water, you need to cover the lid and soak it during steaming and after steaming.

3. Don't fill the tank too full with water, leave an inch of space at the top.

6. French Press

The French press is especially suitable for lazy people in the office, and you don’t need to learn much to use it.

The French press (hereinafter referred to as the French press), also known as the press pot or coffee plunger, was first invented in France in 1850. Of course, all inventions, such as cars and computers, were simple in form compared to today. The French press was no exception. At that time, it was not a tool specifically for brewing coffee. It was also a simple tool consisting of a glass or plastic container and a metal filter with a pressure rod. At that time, more people used the French press to brew black tea than coffee.

French press coffee is made by completely soaking the coffee in the pot, and then using a press rod with a metal filter to separate the coffee and coffee grounds. This brewing method produces a very mellow coffee, which can increase the texture and oil, and the final coffee is also quite clean.

1. Weigh 20 grams of beans and grind them into the size of coarse sugar. The ratio of powder to water is 1:15.

2. Preheat the French press with water and then pour it out; pour the coffee powder into the French press.

3. Pour in 89-degree hot water and start timing. Stir gently after pouring the water to ensure that all the coffee powder is soaked.

4. After four minutes, slowly press the pressure rod down and pour it out.

Advice: Use good beans, use good beans, use good beans, and soak them casually.

7. AeroPress

AeroPress has many different ways of playing, its operability, and the controllability of coffee extraction factors are varied, and there are no absolute rules, so it is deeply loved by many senior coffee lovers.

1. Rinse your AeroPress with boiling water. Place the water in your AeroPress to preheat.

2. Use a scale to measure out 14 grams of coffee.

3. Grind coffee – not too fine (coarse salt size, ek43 8~9).

4. Heat the water to 93 degrees and get ready to brew!

5. Place the Acopress on the lower pot, pour in the ground coffee and flatten the coffee powder.

6. Pour 200 ml of water, start the timer, and stir 4 times to ensure that all the coffee powder is fully wetted

7. Wait 60 seconds.

8. Stir again 4 times.

9. Slowly press the AeroPress for about 30 seconds.

10. Remove the AeroPress, take out the coffee, and stir the coffee.

11. Enjoy it in a cup!

Finally, the espresso:

8. Italian Machine

Advantages: It looks very professional. In addition to being able to make familiar drinks such as latte and cappuccino, the most important thing is that drinking espresso will give you a superior feeling~

Disadvantages: Too many variables, difficult to produce stable products. And it needs complete maintenance every day. The point is that the price of grinders and coffee machines is more than ten times that of hand brewing equipment!

Recommendation: Enthusiasts with a certain economic foundation and simple operating experience can choose it. Although the price is really expensive, there are many ways to play, enough for you to play for a long time.

9. Moka Pot

The Moka pot allows pressurized steam to pass directly through the coffee powder, extracting the inner essence of the coffee. It is then brewed with dark roasted coffee beans, so the brewed coffee has a strong aroma and intense bitterness, with a thin layer of coffee oil on the surface. This layer of oil is the source of the attractive and delicious Italian coffee.

Advantages: It can brew very strong coffee. Also, the moka pot has various shapes and can be collected as a decoration.

Disadvantages: It is difficult to control the temperature, the time it takes for water to pass through the coffee powder, and it is difficult to brew good coffee stably.

Suggestion: This is really not recommended...

10. Siphon Pot

Brewing coffee with a siphon pot gives people a very high-end feeling, and it looks like doing experiments in a laboratory.

The main principle of coffee extraction using a siphon pot is through pressure difference. First, heat the lower cup of water to boiling, then insert the upper pot, making the lower pot in a high-pressure state. Due to the pressure difference between the lower and upper pots, the hot water flows upward to mix with the coffee powder in the upper pot and be extracted. After the extraction process is completed, the fire source of the lower pot is removed, so that the pressure difference between the lower and upper pots is instantly reduced. The siphon effect between the upper and lower pots will cause the coffee extract to flow back to the lower cup.

Suggestion: Mastering stability, especially the water temperature of the coffee, and the timing of various operations, may require a lot of experiments and experience to accumulate stable conclusions.

11. Turkish Pot

Although the method of making Turkish coffee is simple, there are very strict requirements for the production of coffee powder when brewing authentic Turkish coffee. The coffee powder for brewing coffee must be ground extremely finely. Turkish coffee powder can be said to be the finest powder ground among all coffee extraction methods around the world.

Ingredients needed to make Turkish coffee:

Ingredients: 12g medium roasted coffee beans, 130ml water

Production tools: hand-cranked grinder, Turkish coffee pot

Production steps:

① Grind the coffee powder into particles of the same size as baby milk powder, put the ground coffee powder and sugar into a Turkish coffee pot, and add appropriate amount of cold water;

②Put the Turkish coffee pot filled with cold water, coffee powder and sugar on the gas stove and heat it on low heat;

③ After the coffee boils, remove the coffee pot, scrape out the coffee foam with a spoon, and evenly distribute it to each coffee cup, about 1/3 of the amount each time, and then continue to boil;

④Repeat step ③. After three boilings, the coffee will gradually become thicker, but you have to wait until the water is boiled to half of its original volume. Only then is a cup of delicious Turkish coffee ready.
