Pour-over coffee is a delicate culinary art that can bring us a fragrant coffee experience. Here are a series of steps to brew a perfect cup of pour-over coffee.

Choosing the right coffee beans

First, choose fresh and high-quality coffee beans. Freshness is crucial to taste and aroma, so it is recommended to buy whole beans in undamaged packages or buy freshly ground beans in specialty stores. In addition, choose beans of different origins and roasting degrees according to personal taste preferences.

Purify water

Water is one of the most important ingredients in making coffee, so make sure it’s pure. Use a filter or properly treat your tap water to remove impurities like chlorine, and make sure it’s at the right temperature (around 90°C).

Grinding fresh beans

Use freshly ground coffee beans with rich aroma. Choose a suitable grinder to grind the coffee beans into a medium-fine powder suitable for hand brewing.

Preheating equipment

Before you start brewing, preheat your equipment, including the filter paper, hand-pour pot and cup, with hot water. This will increase temperature stability and avoid taste changes caused by temperature differences.

Prepare filter paper and filters

Place the filter paper in the filter and wet it with clean water to remove any pulp taste that may be present. Then place the filter over the pour-over kettle.

Add coffee powder

Pour the prepared coffee powder evenly into the filter and shake it gently to make it flat. Make sure each particle is fully in contact with the water to release the maximum aroma and taste.

Perform initial soaking


Use about twice the amount of water as coffee for the initial soak. First, pour some water evenly from the inside out in a circular motion to wet the coffee grounds. Then wait about 30 seconds to allow the coffee grounds to fully expand and release their aroma.

Even water injection

Next, pour the remaining hot water in slowly and evenly. Be careful to keep the pour rate steady and try to avoid directly hitting the coffee bed to prevent over-extraction or uneven steeping.

Control brewing time

Depending on your personal taste and the type of coffee beans you use, brew for anywhere between 2-4 minutes. Finer grinds usually take less time, while coarser grinds take longer.

Taste and Enjoy

When brewing is complete, remove the hand-pour pot from the cup and gently shake it to allow the remaining liquid in the filter paper to flow into the cup. Now you can enjoy a cup of fragrant, full-flavored and balanced hand-poured coffee! Enjoy this delicious taste!
