Coffee knowledge popularization | How to froth milk correctly

Frothing milk is a process of perception. You need to use all your senses to judge how well the milk is frothed. Your hands are the thermometer, your eyes are responsible for observing the state of the milk as it swirls in the milk tank, and your ears are responsible for listening to the sound of the milk swirling.

Before frothing milk, you should turn on the steam button in advance to remove the remaining milk and water. When frothing milk, be sure to turn on the steam button after the steam wand is immersed in the milk to prevent the milk from splashing everywhere. The steam pressure should be maintained at a certain level. If your coffee machine is equipped with a pressure gauge, its degree should be around 1.1 bar (bar, a unit of pressure).

When you turn on the steam button, turn it all the way in at once. Do not keep turning the steam button while frothing, as this will not increase the steam pressure and speed up the milk rotation.

Place the steam wand under the surface of the milk, making it sizzle, then slowly push the jug upwards and tilt it so that the milk swirls in the jug. The milk no longer sizzles, but makes a deep rumbling sound. Continue to froth the milk at the same angle. When the volume of the milk begins to expand, you need to move the jug down a little. The milk is frothed when your hands can no longer stand the temperature at the bottom of the jug. The temperature of the milk should be 60°C. The sound of the milk should be deeper, like a hum.

Tips for steaming milk

Tip 1: If the milk makes a shrill screaming sound, you need to turn up the steam button or move the milk jug slightly down to allow more air to enter the surface of the milk, then submerge the steam wand into the milk again.

Tip 2: Always wipe the steam wand with a soft, damp, clean cloth. Residual milk will cause the steam wand to rust and breed bacteria. Once the milk is whipped, the texture of the milk should be smooth and silky. You can also squat on the table with the milk jug a few times or stir it a few times, so that the texture of the milk will be more silky and uniform.

Several principles for frothing milk

1. The milk must be kept cold and should be kept in the refrigerator before being whipped;

2. Add enough milk to the milk tank, the amount of milk should reach 1/2 of the tank volume;

3. The standard volume of milk after frothing is: a 300 ml milk jug should produce enough milk to make one cup of coffee; a 600 ml milk jug should produce enough milk to make two cups of coffee;

4.French the milk just before making coffee each time, do not prepare it in advance.
