1. Ingredient selection: Finding the perfect flavor

Good coffee starts with quality raw materials. When we choose raw beans, we should focus on the characteristics and flavor of the beans themselves. Different origins, different types and different processing methods will affect the flavor reflected in the final cup.

Some people prefer the fruity, fresh and bright taste of beans from East Africa; while others prefer the rich, nutty and sweet taste of beans from Brazil. No matter which region or specific type you prefer, you should choose high-quality green beans to ensure that the roasted coffee can present the best flavor.

2. Baking process: Mastering the art of temperature

Roasting is a critical step in transforming green beans into drinkable coffee. In this process, we need to master the art of heat to ensure that the coffee achieves the ideal taste and flavor.

The first step is to determine the degree of roasting. Light roasting will give the coffee more flavors of the original origin, but may have some acidity and bitterness; while deep roasting will make the coffee richer, more bitter, and lose some of the original origin characteristics. Determine the appropriate degree of roasting based on personal preference and the characteristics of the beans used.

The second is to control time and temperature. Different temperatures are required at different stages to develop different flavors. For example, at the beginning, a higher temperature is required to quickly dry the surface moisture; then the temperature is lowered and the time is extended to allow the internal moisture to escape; and finally the temperature is increased to develop the desired flavor. By controlling time and temperature, we can adjust the flavor and taste of coffee.


3. Post-baking processing: Unlocking potential

After roasting, the beans need to go through a period of dormancy and release their potential. This process is called "ripening period", which allows the coffee to better show its flavor characteristics.

During the maturation period, coffee will gradually release carbon dioxide, and various complex chemical reactions will make the coffee more balanced, smooth, and have more layers. Usually, we recommend setting the maturation period to about 1-2 weeks to ensure the best quality.

4. Storage and grinding: keep the coffee fresh

To keep the coffee fresh, it is very important to store it correctly after roasting. First, make sure the beans are completely cooled and stored in a clean, airtight container that is protected from light and moisture.

The second thing is to choose the right grinding method. The different coarseness and fineness will affect the flavor of the brewed coffee. For drip or hand brew, medium to coarse grinding is suitable; for espresso, finer grinding is more suitable.
