Flawed coffee extraction When brewing coffee, if it is light roasted coffee with insufficient extraction or high concentration coffee, it is easy to taste salty, because the sweetness in the coffee is not extracted, so the acidity is very high and the sweetness is not enough, which makes it sour and bitter.
