Brewing ratio of golden coffee

Brewing ratio of golden coffee

Tetsu Kasuya, the 2016 World Brewers Cup champion, invented the 4:6 brewing method for hand-brewed coffee .

In order to find a universal and simple brewing method, Tetsu Kasuya finally came up with this golden ratio after many attempts. After reading this article, you can also brew coffee as delicious as the world champion.

Three secrets

The basic secrets of world champions:

1. Use hot water to filter paper before brewing.

2. The ratio of coffee powder to brewing water is 1:15

3. Brew the brewing water twice with a ratio of 4:6.

The key to coffee brightness lies in coarse grinding

Coffee tastes best when it is ground coarsely, but few people know how to brew it. The 4:6 brewing method can perfectly extract the flavor of coarsely ground coffee.

The left side of the picture shows medium-fine grinds, and the right side shows coarse grinds. Grind to the right coarseness and you are good to go. Then follow the tips above to brew clean, bright coffee.

Grasp the timing of the second water injection

The first 40% of the water in the 4:6 brewing method should be divided into 2 more injections. The injection speed should be kept at a certain level so that the coffee powder can be stirred in the filter paper and the sourness and sweetness of the coffee can be extracted successfully. In addition, the first injection also has the function of fumigation, so the water should be evenly distributed throughout.

The most important thing is that the second water injection should be done after the first water injection is completely filtered out. Tetsu Kasuya regards the timing of the second water injection as more important than mastering the 4:6 ratio, which is the key to determining the flavor of the coffee.

Adjust the coffee strength with 60% water

To put it simply, coffee brewing is to dissolve the ingredients of coffee beans into water and extract the flavor of coffee, which is determined by the previous 40% of brewing. After the flavor is extracted, the next step is to adjust the concentration. Use the remaining 60% of hot water and try to divide it into 3 equal parts for brewing. When you are done, a cup of exquisite coffee is born!

The best coffee on the tip of your tongue

The coffee brewed using the simple secret introduced above is right in front of you. Take a sip right away. It is not bitter and has just the right amount of sourness. It is clear at first and has a clean aftertaste. One cup will make you want to drink more even after you have finished the last drop.

What kind of story is behind Tetsu Kasuya, who can brew such delicious coffee?

In 3 years, he turned from an IT white-collar worker into a coffee brewing master

This is a story of counterattack and also an inspirational story.

Tetsu Kasuya was working at an IT consulting company until he fell ill and was hospitalized.

"I was hospitalized for diabetes, and when I was looking for a drink suitable for diabetics, I found coffee. I had a lot of free time during my hospitalization, so I gathered all the props, brewed coffee and tried it over and over again, and often went to nearby coffee shops to ask for advice on how to brew coffee."

Tetsu Kasuya, who seldom visited coffee shops before, went to various coffee shops to learn from them, and then went home to continue his research. Finally, he made up his mind to quit his job and enter the coffee industry.

"When I was admitted to the hospital, my outlook on life changed. We only have one life, so we should do as much as possible of what we like before it's too late, and I chose to embrace the world of coffee without hesitation."

When talking about the fun of hand-poured coffee:

"I am not good at painting or music. Brewing coffee is the only way for me to satisfy my desire for self-expression. There are a thousand people, and there are a thousand flavors. The same person brews a different flavor every time. This is a world with no end in sight."

Expectations for the development of the coffee industry

“I think it will become more and more automated in the future. Various machines will explore technical theories on our behalf. Our value lies in exploring more wonderful experiences brought by hand-brewed coffee and presenting them to everyone.”

Many brewing methods taught by masters are either evasive or obscure. The 4:6 brewing method digitizes and visualizes the theory, making it easier for novices to get started. What are you waiting for? Try it today!
