The ratio of coffee and milk tea in Hong Kong-style Yuanyang

The ratio of coffee and milk tea in Hong Kong-style Yuanyang
Hong Kong Style Yuanyang】 pays more attention to details, especially some old Hong Kong tea restaurants, which generally use very strong black tea leaves, the so-called silk stocking milk tea, to pull tea. The so-called silk stockings are not necessarily silk stockings, but high-quality black tea is put into a French velvet bag for pulling tea. The pulled black tea is smooth and rich, and is made with full-fat evaporated milk and sugar. I prefer Dutch black and white evaporated milk, and then add a portion of black coffee powder. I like to add ice cubes when I like it cold, and I like to drink it directly when I like it hot. Today I will simplify the process and directly use Australian A2 raw milk to compete with traditional evaporated milk.

Yuanyang milk tea is a specialty drink in Hong Kong, commonly found in Hong Kong tea restaurants. It is made by mixing half coffee and half silk stocking milk tea, combining the aroma of coffee and the richness of milk tea. Drinkers can add sugar by themselves, or ask the store to add condensed milk in advance.

【Material】
Two black tea bags, about 100ML of evaporated milk, freshly ground espresso, and a little sugar.

【practice】
1. 18g coffee powder, extract 36g concentrate at 1:2;
2. Pour boiling water above 90 degrees into the cup, put the black tea bag in and shake it for about 20 seconds before taking it out;
3. Pour in the brewed espresso;
4. Pour in evaporated milk and add appropriate amount of sugar.

【Tips】

1. Evaporated milk is the best milk for making milk tea. If there is no other milk available, coffee mate can be used as a substitute. Cow's milk is not recommended.
2. If you don’t have coffee powder, you can use coffee powder or instant black coffee instead.
3. The water temperature for brewing black tea should be high, and it is best to boil water. Don't brew black tea for too long, 20 seconds is enough. You can also use a bag of black tea, depending on the concentration you like.

If you like cold drinks, prepare some ice cubes

process:

1. Put the black tea bag into hot water to brew the concentrated black tea liquid for later use. Don't use too much water, about 100 ml is enough.

2. Extract an espresso

3. Add the golden coffee sugar into the black tea liquid

4. Then add the espresso to the black tea liquid

5. Then add a portion of Australian a2 full fat milk

6. Then add ice cubes

7. Stir evenly and you have a cup of milk coffee.

Tips: Espresso can be replaced with commercially available espresso powder, instant black coffee powder instead of three-in-one coffee powder, or you can make it yourself with a household drip coffee machine or extract it with a French press. If you use the latter, you can directly mix the black tea bag and coffee powder together, such as directly putting the coffee powder and black tea bag into the drip coffee machine and extracting them together. The same is true for the French press, but the taste is definitely not as strong as espresso or coffee powder.
