How old are you if you still can’t make a good cup of coffee?

Hello, I am Lu Rui. From preparation, brewing to tasting, brewing coffee is an experience full of vision, smell and taste. There are many variables that affect a cup of coffee, including the grind of the beans, the temperature of the water, the brewing time, etc., which will affect the delicate flavor of each cup of coffee. Hand brewed coffee allows you to experience the multi-layered flavor of coffee and fully appreciate the charm of hand-feeling skills, which makes people unable to extricate themselves from it once they try it. With more practice, you can also brew a cup of your favorite coffee. Let's try hand brewing coffee today!

◎Utensils: hand brewing kettle, filter cup, filter paper, bottom pot, grinder

◎Auxiliary equipment: scale, coffee measuring spoon, thermometer, timer

Step 1: Weigh the beans

18 grams of coffee beans can make about 200 ml of coffee. If you don’t have a scale, you can also use a coffee measuring spoon. The capacity of the common measuring spoon on the market is 8g or 10g.

Step 2: Grind the coffee beans

Put the beans into the grinder. If you don’t have an electric grinder, you can use a hand-cranked grinder. You can smell the aroma of the coffee powder while grinding the beans.

Step 3: Heat the kettle and pour the coffee powder evenly

After folding the filter paper and placing it firmly on the filter cup, soak the filter paper with some hot water and preheat the filter cup to remove the filter paper odor.

After pouring out the rinsing water, pour the coffee powder evenly into the filter cup.

Step 4: Pre-soaking and steaming

Use a consistent amount of water to slowly draw a circle from the center outwards to allow the coffee grounds to be fully and evenly soaked, then wait for 15 seconds.

Step 5: Add water and brew

When brewing by hand, use the center as the center and slowly swirl the water outwards with a steady and even stream of water, allowing the hot water to evenly extract the rich coffee flavor. Brew until it reaches about 200cc, or the ratio you like.

It is important to note that when pouring water, do not flush the outermost filter paper, because the hot water will drip directly along the filter paper, failing to extract the coffee and diluting it instead.

Finally, you can add a little milk to neutralize the astringency

The above content is the most basic method of hand brewing brought by Lu Rui. There are many other techniques in the filtering process, which are some very magical variables. With the same coffee and utensils, different methods can produce completely different flavors of extracted coffee. Follow Lu Rui and he will slowly reveal the secrets to you.
